You can peel, cut up and boil as if you were making mashed potatoes. Mash, season the same as you would potatoes. Can also use as a base for a custard style pudding.

Viv, I've seen them at the farmers' market, and had patty pan squash roasted and stuffed with filling. I'll see if I can find a recipe, but I haven't cooked them for a while. They are so darned cute!
