I recently found a chicken salad recipe that had 3 cups of cooked rice added to it. Has anyone here ever put RICE in chicken salad?? It had rice, chicken, mayo, oranges, almonds, pineapple, orange juice, etc. -- ~*~Angela~*~

If I add apples to a salad (or even pancake batter for apple pancakes - yum!) I dice them finely. That way I still have some texture and crunch but not huge pieces to distract me from the salad. I do love the idea of slicing them thin and serving them on the side; I bet they'd be good placed as a layer on a sandwich (something I'd never considered before). -- Lisa

Angela, I'm more likely to make an eat-with-a-fork chicken salad than one to have in a sandwich, so I'd cut apples in maybe 1/2 inch chunks - big enough to stab with a fork. If I wanted apple in a sandwich with chicken salad, I think I'd be more likely to offer thin slices of a nice tart apple on the side so they could be a crunchy layer in the sandwich. Other veggies? Asparagus (of course), chopped mild yellow peppers, just barely blanched green peas or snow peas, green beans - so many choices!

Oh yumm! Togo's isn't around here, but boy they sound good! Wonder if they ship well? j/k lol If you're adding apples to chicken salad, do YOU cut them small, cube them or grate them? I grated mine this time, but I think the grate was too small, it was a little more "mush" than I'd like. Are there any other fruits or veggies that might taste good in chicken salad? Janet , my favorite was the turkey & avocado or ham and swiss. The almond chicken salad was so good too! I had them cater my baby shower and it was wonderful. Oh, a happy taste flashback to Togo's! I used to travel on business to a town where there was one of their sandwich shops, and it became the go-to place for lunch, and sometimes to pick up to bring back to my hotel for a quick dinner. My favourite was avocado, tomato and Swiss cheese on a wheat bun. Deelish!

I ended up making it very simply, but I got SO many compliments on it! EVERYONE loved it! I just used chicken, mayo, salt, pepper, craisins, almonds AND pecans! It was DELISH!!!!!!!! Thank you ALL so much for the delicious ideas! -- ~*~Angela~*~ -- Edited by Angela P at 06/04/2009 1:16 PM PDT

I have to tell you this weekend... I made chicken salad..and I thought the craisins I had were a little hard.. I soaked them in warm water for a little bit like I have done with raisins.. I think it made the chicken salad even better. It warm water sort of freshened up the craisins. So.. don't throw away those stale dried fruit.. a little warm water just freshens them up
