Re: Baked baby potatoes & bacon

I mentioned this recipe to my husband today when a friend brought us half a bag of tiny potatoes (she belongs to a co-op and often gets more produce than she can use). He's intrigued, so I'm thinking we'll have to try this soon (or maybe the smashed baked potato recipe you posted). I may have mentioned I love anything involving potatoes and bacon (and if you throw some cheese in there I'm in Heaven LOL)! David, it's good to hear from you. I too am appreciative of the follow-ups posted by others when they try a posted recipe, so thank you. Janet, I have mashed other types of potatoes, but I generally don't do anything with white potatoes other than mashing since they fall apart so easily. I have baked them though and they're good that way. I've had mashed golden and red potatoes (with some roasted garlic, parmesan cheese and cream cheese blended in - yum!) - I like to leave the scrubbed skins on for even more texture. I like to use golden potatoes sliced real thin to make home-made potato chips although I haven't done that in a long time. I don't think I've ever met a potato I didn't like. -- Lisa

I love potatoes any way I can get them......great recipe Scott. And I agree, that was a good review from David. I love it when someone else tries one of these recipes and gives up their take on how it turned out. -- >> ~~>*>Cin(\0/)<*<~~ << >> ><(((*>Jesus<*)))>< <<

Lisa, sometime give the gold potatoes a try for mashing too. I really like the taste and texture, and they're such a nice colour as well. David, that's a glowing review! Copying the recipe now. • Janet

Oh yum. I love bacon on a baked potato; I bet this would be awesome. Good idea on the red or gold potatoes. They do seem to be much more dense than white potatoes. About all I use white potatoes for is mashing. -- Lisa

Some times fingerling potatoes are not in the budget so I have quartered red or gold potatoes. White potatoes fell apart.

Simple and tasty! What a cool idea, thanks Scott. Mmm...some snipped chives, a little Roquefort cheese, curry - those dipping options are endless! • Janet

Baked baby potatoes & bacon

16 baby potatoes ,any kind slices of streaky bacon toothpicks Mayonnaise or sour cream with some favoring (some diced onion, stone ground mustard or what every you think will go with the meal) for dipping (optional) Preheat oven to 400 f Wash the potatoes well. Wrap the bacon outside a potato to complete a round, then cut the bacon. Use a toothpick to fix the bacon into the potato. Make it loose, it will shrink. I add a little pepper to the bacon before I use it. I would like to try a little sprinkle of brown sugar some time. Continue wrapping the remaining the potatoes. Put all the potatoes wrapped with bacon onto the baking tray. Bake in the oven for about 20 minutes or until a toothpick or fork can be inserted through the potatoes easily. They are good warm or at room temp.
