Now this is a grits recipe that I can get behind! I love muffins, and I love cornbread and I can imagine that the texture of these would be similar to cheesy cornbread muffins. Thanks for sharing! -- Lisa

Cheezy Bacon Grit Muffins (for David)

Well.....it cooks in 20 minutes (didn't know quite where to post it) David, you can probably use real grits ;0) Cheezy Bacon Grit Muffins Cooking Time: 20 min; Servings: 12; Preparation Time: 15 min * 1/2 lb. bacon, fried and crumbled * 2 pkg. (individual size) instant grits * 1/2 cup milk * 1 egg * 1/2 cup shredded cheese * 1 cup self rising flour 1.) Make grits according to directions on package 2.) Add milk, egg, cheese and flour 3.) Combine until moistened 4.) Fold in bacon 5.) Line muffin 12 muffin tins with paper liners. 6.) Spray with non-stick spray 7.) Divide mix equally into muffin tins 8.) Bake 20 minutes in a 400 degree oven Comment: These can also be made with sausage or ham. Country ham will work but cut the amount in half due to the salt.
