Here's something very similar I cooked in a counter top roaster oven at work. The cheese sort of disappeared into the sauce after being held too long. Next time I'll leave out the bell pepper and add some mushrooms and incorporate the consomme. Tripled the recipe and there were no leftovers.

    Bama Steak And Cheese Sandwiches

    1 lb Deli Roast Beef
1-2 Cups Mozzarella Cheese (or cheese of your choice)
    1/2 stick margarine or butter
    1 onion, chopped
    1 bell pepper, chopped (optional)
3-4 Tablespoons Dale's Sauce (can use Moore's Marinade, Soy Sauce, Worcestershire sauce, etc)
Soft Deli Rolls (such as Sara Lee)

Chop up roast beef. In large skillet, melt 1/2 stick margarine or butter. Add 1-2 tablespoons sauce, according to taste. Add onions and peppers and saute until tender. Add roast beef and additional sauce (according to taste) and continue cooking over medium heat until just warmed. Take off heat and sprinkle cheese over top. Let sit until melted and then spoon onto rolls.

Oooh, yum! I hadn't thought of using pre-sliced deli roast beef. I'm going to do this the next time I am craving a french dip sandwich. I am a purist though and prefer my french dips sans cheese or mushrooms. The onions sound like a pretty good addition though. :)

I melted the cheese added the beef and then put a can of drained sliced mushrooms on the 4 hogies and slipped them into the oven for a few min. so it would soak up more juice. I didn't have 2 cans of consomme, just one so I made a packet of au jus and combined. Next time I think that some browned onions would go well on the sandwich.

My thought exactly....I was thinking caramelized onions would be great on this.....yummmmmmmmm

Yum! A must try for an easy meal. I also love Provolone cheese on French Dips and some sliced onions. French dips are one of my favs and I usually make them out of leftover pot roast, but this is a great idea. I love Campbell's Beef Consomme.

Nice recipe David. So great and easy after working all day. Never thought of using mozzarella in French dip sandwiches before.
    Thanks for sharing.

This is delicious and so easy to prepare. Serve with potato chips and the dipping sauce.

    French Dip Sandwiches
1 pound prepared roast beef from deli; sliced thin
1 can Campbells beef consomme; undiluted
1/4 pound deli sliced mozzarella cheese
    6 soft hoagie rolls

In a large saucepan, heat consomme until its warm. With scissors, snip the roast beef into 1/2 inch wide pieces and add to consomme. Continue to cook until meat is warm. Place mozzarella on open faced hoagies and heat in 350 °F oven until just melted. Then put meat on hoagie rolls with tongs and reassemble sandwich. Pour some of the consomme juice into individual serving bowls for dipping.

(I prefer 1/4 lb of beef per sandwich, 2 cans consomme and will try with a can of mushrooms added next time.)
