I'm in the "LOVE guacamole" camp, and have tried lots of variations - yours looks like a good one, Kathy! Although the classic guac includes cilantro, I'm not a fan of its taste (seems you either love it or not), so I just leave it out. There are 95 different recipes for guacamole at the California Avocado Commission website - great place to explore for even more ideas: http://www.avocado.org/recipes Of course, I like avocados in other things too, like sliced or mashed up with some grated Parmesan in a sandwich, or onto a burger, or in bite-sized cubes in a salad. Yum! As for buying them, I've had so many bad experiences with avocados that have been squeezed so often they're black and bruised inside before I can even get them home that I almost always buy them when they're like bright green oval rocks! It might take a week or more, depending on how warm it is in the house, but I know that by the time they darken and soften to "doneness" they'll still be perfect. Oh, and I just learned from looking at the http://www.avocado.org/about/varieties that judging ripeness seems to vary by which variety it is (some change colour; some don't). However, "yields to gentle pressure" seems to be consistent advice for all types. More info on selecting and storing (including the paper bag method) here. I bought three big beautiful avocados at the store just yesterday (on sale at 99 cents each), and they'll likely be ready in about a week, so I'll have time to anticipate. • Janet

I most often give them a very gentle squeeze (not enough to bruise them - hopefully), and if they seem to yield slightly to my touch I figure they are ripe. The color of the skin isn't always a very good indicator. Sometimes I shake them to see if the seed bounces around loosely inside, although I have no idea if this is really a sign of ripeness or not. LOL I have found that the firmer they are the more unripe they are. I've been told that if you buy them unripe and then put them in a paper bag at home they will continue to ripen but I haven't actually tried it myself. -- Lisa

I am not a fan of Guac plain..but added to a taco, burrito or a Mexican type salad... you get an OMG meal!!! It just gives it that extra zing. I prefer to make it fresh also. I know at Chevy's they will make it fresh at the table.. yummy. I've made it a few times at home..I'm usually just to lazy to make it though. It is just soooo yummy. I add a touch more garlic then is called for..and a squeeze more lime... YUMMY.. Kathy...this recipe looks yummy. I usually use crushed tomatoes..but I think next time I'm going to go with the fresh tomato. Thanks for sharing.

Lately I've been cheating and buying an organic product I found in the produce section. It's called "Wholly Guacamole" and is made from nothing but mashed avocados and a couple of spices. It comes in two varieties, either zesty or classic. It's great when you need guac in a pinch and don't have time to create it yourself. It's not incredibly cheap, $2.99 (I found it on sale for $2.00) but at the price of avocados lately it doesn't seem all that expensive either. -- Lisa

Mmmmm... I love guacamole. I'm always up for a new recipe to try. I usually just mix mashed avocado and Pace picante sauce.  This would be *really* homemade. -- Lisa

Every place I take this, I'm asked for the recipe. It's great fun to watch a crowd stand around the bowl and devour it until the bowl is scraped clean! 5 HASS AVOCADOS (medium sized) 1/2 - 3/4 CUP ONION, diced 2 t. GRANULATED GARLIC 1 t. SALT 1 ROMA TOMATO, seeded and diced 2 - 3 T. SALSA JUICE OF 1/2 LIME Mash the avocados, then mix with the rest of the ingredients. One variation, add diced hot peppers for a nice kick!
