Jennifer, I checked my notes, I have used rice wine, Champaign, apple cider, white wine vinegar with good results. One note is to check for sweet vers sour and adjust to taste (I like mine with a bite so I add a little more vinegar). The last note is to check for salt, a little will bring out the flavors. Good Luck. I bought 5# (they were .99 #) of plums that I will be making into freezer jam. The 10# (.99 #) of tomatoes roasted down to 2 pint freezer bags, there will be a red sauce in the future. When they came out of the oven I had a roasted tomato and bacon sandwich. (OMG)

Scott, I am going to try the red plums next week. I am making Paula Dean's chicken stir-fry and egg rolls. So ,I'll make the plum sauce for the egg rolls. Colleen brought the jar over to my house. Jennifer, Red plums should work. I get blue plum preserves at a polish supermarket here (if your market has a polish section check it out). Both the onion, ginger and garlic are fresh. I chop them very fine and take the flat of the knife and turn them into a paste. Apricot and peach preserves work. -- Edited by 2598976 at 05/19/2009 8:26 PM PDT

Scott, Colleen and I went shopping yesterday and the only plum preserves we could find were Smuckers Red Plum Preserves. Would these be okay for the duck sauce? Jennifer, I have use both peach and apricot preserves, they both work with a little different taste (they both were good). You need to use a good brand that has a lot of fruit. The store brands here are more jelly than fruit (except for Aldi).

I always dipped my egg rolls in the brown liquid stuff that comes in packages when you get Chinese to go. Runs all over the place. Shows you how much I know !!! My favorite is shrimp in garlic sauce. Would anybody have a recipe for garlic sauce? Penny. -- ....A balanced diet is a cookie in each hand...

I finally tried the sweet and sour sauce to go with eggrolls. Delish!!! It was so quick and easy I couldn't believe it. Way better than jar sweet and sour sauce. Thanks for the recipe and the pineapple juice, Jennifer. I will definitely be making this again and again. Next, I want to try Scott's duck sauce.

I've never had duck sauce but it sounds good. I've never had duck either, but I've always wanted to try the duck wrapped in little pancakes with the sauce.....Peking Duck, I think.
