    Jennifer,

I checked my notes, I have used rice wine, Champaign, apple cider, white wine vinegar with good results. One note is to check for sweet vers sour and adjust to taste (I like mine with a bite so I add a little more vinegar). The last note is to check for salt, a little will bring out the flavors. Good Luck.
I bought 5# (they were .99 #) of plums that I will be making into freezer jam.
The 10# (.99 #) of tomatoes roasted down to 2 pint freezer bags, there will be a red sauce in the future. When they came out of the oven I had a roasted tomato and bacon sandwich. (OMG)

Scott, I am going to try the red plums next week. I am making Paula Dean's chicken stir-fry and egg rolls. So ,I'll make the plum sauce for the egg rolls. Colleen brought the jar over to my house.:-D Your recipe calls for vinegar-does it matter which kind? I was thinking rice wine .

Scott, thank you for that info! I had no idea. We prefer the duck sauce as it's sweeter:)

    LOL, Scott!
Unfortunately , out here , there is no such thing as a Polish market or a Polish section. Asian, yes, Mexican definitely, Polish, no. Sometimes, I totally miss Chicago. By the way, I am 100% Polish.

    Jennifer,

Red plums should work. I get blue plum preserves at a polish supermarket here (if your market has a polish section check it out). Both the onion, ginger and garlic are fresh. I chop them very fine and take the flat of the knife and turn them into a paste. Apricot and peach preserves work.

    Scott,
Colleen and I went shopping yesterday and the only plum preserves we could find were Smuckers Red Plum Preserves. Would these be okay for the duck sauce?
Also, is the minced onion and ginger fresh or dried ? Thanks!

    Jennifer,

I have use both peach and apricot preserves, they both work with a little different taste (they both were good). You need to use a good brand that has a lot of fruit. The store brands here are more jelly than fruit (except for Aldi).

I always dipped my egg rolls in the brown liquid stuff that comes in packages when you get Chinese to go. Runs all over the place. Shows you how much I know !!! My favorite is shrimp in garlic sauce. Would anybody have a recipe for garlic sauce?

Colleen , you're welcome! I want to try Scott's duck sauce too, but I need to find plum preserves first. I haven't seen them, but I haven't really looked for them yet.

I finally tried the sweet and sour sauce to go with eggrolls. Delish!!! It was so quick and easy I couldn't believe it. Way better than jar sweet and sour sauce. Thanks for the recipe and the pineapple juice, Jennifer. I will definitely be making this again and again. Next, I want to try Scott's duck sauce.

    > To me duck sauce is what you put on egg rolls... sweet and sour sauce is that gooey reddish sauce you find on sweet an sour chicken. I much prefer duck sauce. This recipe looks wonderful and we eat a lot of Chinese food in my house..though I tend to make it myself now that I am supposed to avoid salt. When I buy duck sauce I buy Dai Day. It comes in this huge jar... and we all love it. Comes very close to what you get in the Chinese Restaurants.

Really ? I've never had anything but sweet and sour on my egg rolls- I love it! O mitting the salt would be fine -it's only a pinch so you probably won't even notice it's not there.

I've never had duck sauce but it sounds good. I've never had duck either, but I've always wanted to try the duck wrapped in little pancakes with the sauce.....Peking Duck, I think. I wouldn't try making duck because Hubby won't eat dark meat, sigh.
