Hi Maggie. I just thought I would pass along a tip I got from a fabulous mexican cook who told me to put the seed of one of the avocados you use into the guacamole after you have finished mixing it all up. Just bury it in the guacamole until you serve it, cover with saran wrap and it will keep it from turning brown. Seems to work pretty good.

is there any way to keep guacamole from going yucky so fast? i've tried using lemon or lime juice and putting saran wrap right on the top of the guac but it still goes brown really fast. mostly i don't try...just chop and combine everything but the avocados ahead of time and mix in the avocado at the last minute. any other ideas that work better?

Crystal, your recipe is very close to mine. I dice red onion, instead of white or yellow...gives a different flavor.

You're welcome Crystal. Yes, I've seen blue corn chips at the market. There are so many flavors out there. I think I remember seeing guacamole flavored chips too. The nachos with melted cheese looks like a yummy go-with snack.

Hope you don't mind me jumping in... our local grocery sells Tostitos brand natural blue corn chips -- they are made from organically-grown blue corn. They're in the same area as the regular chips.

Thanks for that link Michelle. It brought a smile to my face. I am going to have to try those blue chips that was used. I normally just use the tortilla chips by Mission. Can those blue chips be bought in a regular grocery store?

Thank you for sharing the recipe, Crystal. I'm a guac fan too. Janet, my hubby dislikes cilantro too. It seems to be one of those things that people either really like or really dislike -- not a lot of middle-of-the-road opinion. Great recipe, I love the addition of goat cheese and pistachios to give this standby a new flavor. Can't wait to try it!

Crystal, the California Avocado Commission has something like 100 different recipes for guacamole at their website (www.avocado.org), but nothing beats the appeal of your classic version! I'm not a fan of cilantro, so I tend to just leave it out, and if I don't have a nice tomato on hand, a little medium salsa is a tasty alternative. This trendy California Guacamole recipe from that site looks interesting: 2 California avocados, about 1 pound 1/2 Cup finely crumbled, chilled, fresh white goat cheese 1/4 Cup chopped, fresh cilantro 2 Tbsp chopped, toasted pistachio nuts 1/4 tsp (or to taste) crushed, red pepper flakes 2 large cloves garlic, finely chopped

Guacamole is one of those dips that we can't get enough of, thanks so much for sharing this Crystal! Another tip for avocados is to score the flesh both vertically and horizontally, taking the knife point just to the skin. It's then easy to scoop out with a spoon!

This is a guacamole recipe that I made this weekend. It was easy and delicious. I thought I would share it with each of you. I found it on www.mex-recipes.com/. They also have some other really great sounding and easy recipes on this site if you enjoy Mexican. 3 ripe Avocados 1 vine ripe tomato, diced 1/2 small onion, minced 1 tbs. fresh cilantro, chopped 1 1/2 tbs. fresh lemon or lime juice 1 clove garlic, minced and mashed. Salt to taste, 1/2 teaspoon should do. Directions: Cut avocados in halve and scoop out flesh into a bowl. Add remaining ingredients and stir till well combined. Tip> Cut avocados in halve. With a sharp knife hit seed in center lift seed out no mess.
