This recipe is from a Taste of Home Cookbook. We enjoy this meatless dish with a side salad. It is also great to take to potluck dinners!
PIEROGI CASSEROLE
1 c. finely chopped onion
1/2 c. butter
2 c. ricotta
1 egg
1/4 tsp. onion salt
2 c. mashed potatoes (prepared with
milk and butter)
1 c. shredded cheddar cheese
1/4 tsp. salt
1/8 tsp. pepper
9 lasagna noodles, cooked and drained
In a skillet, saute onion in butter until tender; set aside. In a bowl combine ricotta, egg, and onion salt. In another bowl, combine potatoes, cheddar cheese, salt and pepper. Place three noodles in a greased 9x13 pan. Top with ricotta mixture and three more noodles. Top with mashed potato mixture and remaining noodles. Top casserole with the onion and butter saute. Cover and bake at 350 for 30 minutes or until heated through. Let stand 10 minutes before serving.
*** I usually make thiis when I have leftover mashed potatoes.
