Our weather is pretty wacky here - runs from hot to cold. Do you mind sharing your butternut squash soup recipe? TIA. I like a peach soup with a dollup of sour cream, during the summer or as an appy any time of the year.

Gazpacho is one of my very favorite fresh summer meals, Janet -- I just adore it. If you need a recipe, I have a good one, do let me know. It's so refreshing on a hot day that on occasion it's been an entire meal, accompanied by a slice of crusty bread.

With a brief return to cool weather in Florida, I'm going to make butternut squash soup and sandwiches for our dinner this evening. It may be the last opportunity to really enjoy soup til next winter!
