This is similar to my mom's method of using leftovers, and always a terrific idea! We tend to be a throw-away society, but one thing I really hate throwing away is food, it's best for the budget to get every meal we can out of it. Thanks for the reminder that a great meal is just a short hop from the refrigerated leftovers!

Use up your left-over chicken, pork or turkey

Here is a recipe I concocted. It is a great way to use up your left-over Thanksgiving turkey. I also have used chicken, and pork. My family loves it and it's so easy. Take your left-over gravy, add to it a stalk or two of chopped celery, one large onion,1-2t. poultry seasoning,1-2t. salt and pepper to taste. If you don't have left-over gravy, make your own using chicken broth thickened with flour and water. Let that simmer while you chop up your left-over meat. Add meat to gravy. Simmer for 30 minutes. Stir in 1 can of cream soup. I prefer mushroom, but have used celery or cream of chicken. Add about 2 cups corn, either your left-over,canned or frozen. While that is heating through, make some rice to pour gravy mix over. I have also poured the gravy over left-over stuffing (YUMMY),and left over mashed potatoes.
