Just to let everyone know that the Mashed Baked recipe I posted is really delicious. Paula Deen did it again with a quick and easy recipe. I would have never thought to add hashbrowns to the instant potatoes.

Angela, my dinner is going to be a quickie too.  I like Bertolli's products, so tonight I'm trying their Shrimp Scampi & Linguine.

Dawn, Adding green peppers & onions to the meatball mixture sounds great. (I sometimes make my meatballs similar to yours, but add Lipton onion/mushroom dry soup mix) I'm mentally filing away your onion/pepper mixture for this recipe (but using home made meatballs & Provolone cheese). http://www.txbeef.org/recipe.php3?105214811

Carol: I really do not have a recipe for the meatballs I kinda just wing it. I usually take a 1lb of ground beef and add to it some finely chopped onions and bell pepper and a few bread crumbs. Sometimes I add an egg. I make the meatballs fairly small and cook them in a skillet. I sometimes add additional onions and peppers to the skillet along with some soy sauce. I cook them until they are no longer pink inside. I have added a little cornstarch to the soy sauce to make a gravy for the meatballs as well.

For dinner tonight, I am making meatballs with onions and peppers, lima beans, and a new recipe called mashed baked. I read the reviews for this recipe and everyone who has tried it loved it. Once again it is a Paula Deen recipe. Here it is for everyone here at Campbell's to try. 4 cups frozen hash browns 1 (7.6-ounce) package butter and herb mashed potato mix 1 stick butter, softened 4 ounces cream cheese, softened 1 cup shredded Monterey Jack cheese 1/2 cup sour cream 1/2 teaspoon garlic salt 1/2 teaspoon salt 1/2 teaspoon pepper 2 cups boiling water 2 cups prepared French-fried onion rings Preheat oven to 350 degrees F. Bring a pot of water to the boil and add the hash browns. Cook for 5 minutes and drain. In a large bowl, mix together the cooked hash browns, mashed potato mix, butter, cream cheese, jack cheese, sour cream, garlic salt, salt and pepper. Stir in the boiling water. Place in a greased 2-quart casserole dish. Bake for 35 to 45 minutes. Sprinkle the onion rings over the casserole and bake for about 5 to 8 minutes longer until onions are golden brown.

Mom, it turned out really well. I wasn't sure if I could cook beans etc in water in the cooker. Much to my surprise, it worked. Whoo-Hoo. The only add ins I made were potstickers (chicken & veggie) toward the end of cooking time. I ladled the soup into my Japanese soup bowls, and served with egg rolls on the side. Next time I will add matzoh balls in place of the potstickers.

Tonight (depending on how it turns out), will be a crockpot soup experiment. Normally I make this soup on the stove in a Dutch oven. So far, I used two packages of soup mix -- one is Ministrone (by Streit's); and the other is Vegetable with Mushrooms (by Manischewitz). Both collectively contain dry beans and seasonings, i.e. green and yellow split peas, barley, lima beans, mushrooms, onions, carrots, egg noodles & seasoning packets. I poured 10 cups of water into the pot and the two packages of soup mix, & set the cooker on High for eight hours. About 45 minutes before the end of cooking time, I will add the seasoning packets & maybe...leftover cooked shredded chicken, a can of Campbells vegetable or chicken noodle & maybe more veggies - yet to be determined. Usually I add bow ties or vermicelli. I have no idea how it will turn out. Wish me luck.
