Thanks, Barbara Barbara, I am a professional cook, and after a long day, I want something simple when I come home. I often freeze items to reheat for a quick meal. Most things freeze well if they are sealed. Some dishes however, can seperate when reheating, particulaly items with a cream or egg base.

Depending on how you wrap the leftovers for the freezer, I'd recommend removing as much air as possible so as to help avoid possible freezer burn. When I use ziplock bags, I try to fold and compress to remove the air. A vacuum system is great if you can afford one.

When I cook most casserole type recipes.. I always try to make it a serving or 2 larger... so I can freeze the left overs. There are only a few things that you can't freeze... mayo and raw eggs come to mind... but if it is all cooked ingrediants you should not have a problem.

Hi Barbara. Yes, yes, and yes. You can freeze the cooked food in a freezer container or in a zip-lock. Defrost, and place the contents in a baking dish & bake - or in a microwaveable dish, cover with a paper towel & reheat.
