I like to use a bundt pan. I think it's pretty that way. But you could use the standard loaf pans or cake pans and it would work just fine. -- Edited by 313870 at 12/26/2006 12:31 PM

even without being concerned about the sugar this looks wonderful Sherrie...that combo of dried fruits instead of the sweet glace fruit is very appealng along with the spices. what size pans do you use?

Try this one! Diabetic Fruitcake 3 cups raisins or currants 1 cup chopped dates 1 cup shortening 2 cups hot water 1/2 teaspoon salt 2 teaspoons cinnamon 1/2 teaspoon cloves 1 cup prunes or dried figs or dried apricots 2 teaspoons vanilla 3 cups flour 2 teaspoons baking soda 1 teaspoon baking powder Mix raisins, dates, shortening, hot water, salt, cinnamon, cloves and prunes. Boil 5 minutes. Cool and add vanilla, flour, baking soda and baking powder. Line pans with paper. Bake 350 30 minutes. Reduce heat to 325 and bake until tests come clear 25-30 minute more.

Low Sugar/Sugar Free Fruitcake?

Does anyone know of a way to make a Low Sugar or Sugar free fruitcake? My dad just adores fruitcake, but over the last 5 years, he hasnt been able to eat any due to his diabetes. Being the good daughter ::adjusts my halo:::, I was hoping to find something that was lower in sugar or as close to sugar free as possible that he could at least have a few slices of during the holidays.
