Thanks for your update Donna. I think it's great when kids like foods like pepper. I don't know why, but it took me years to acquire a taste for them.

Just an update to my original inquiry. I went ahead and made this with four whole peppers and it turned out great. My kids loved it. I think I prefer using whole peppers rather than cutting them up.

The recipe for stuffed pepper casserole calls for two peppers cut lengthwise into quarters. I don't understand how you're supposed to stuff them when they're cut into pieces. The photo seems to show eight whole peppers with the tops cut off, which is how I usually make stuffed peppers. Can you clarify this for me? Thanks very much.
