Hi Mary, Great question! I have made swirl appetizers in advance on many occasions, and have done both freezing methods you describe. If you slice ahead of time, place flat on cookie sheet lined with plastic wrap (or wax paper--it makes it a snap to lift them up once frozen). Freeze just until firm (about an hour), then place in heavy-duty ziplock freezer bags. When you are ready to bake, place on baking sheet, and thaw about 30-45 minutes (same as when thawing puff pastry; they should still be cold and firm when ready to bake). Bake as directed! You can also freeze the entire roll. Wrap tightly in plastic wrap, and then place in heavy-duty ziplock freezer bags. When ready to bake, thaw about 20 minutes, then slice (while still slightly frozen; his is a nice trick, it actually makes it easier to slice when they are slightly frozen). Place on baking sheet and thaw 10-25 minutes longer. Bake as directed! Hope it goes well! Camilla

Hi, I am making in the Spinach Cheese swirls for a party in a couple of days, unfortunately the only time I have to make them is today. So I wondered the best way to hold them for two days. Should I freeze the logs, then slice and bake, or slice and freeze and then bake or can I simply refrigerate the unslice logs?
