Sounds yummy. I love finding new recipes for leftover meat. One of my favorites is adding leftover roast beef or steak to Campbell's ABC veggie soup with some ketchup. Ketchup makes veggie soup so good!! -- Jennifer When baking, follow directions. When cooking, go by your own taste.- Laiko Bahrs -- Edited by 2864590 at 08/19/2008 2:13 PM PDT

Left over Roast Beef my way w\Campbell's Tomato Soup

Had some Roast Beef left over and wanted to do something totally different with it, instead of veggie stew...sssooooo this is what I did. Left over Roast Beef my way w\Campbell's Tomato Soup Had approximately 12 or so ounces of Roast Beef, and about 3/4 c of brown gravy. Chopped-up the roast beef (shredded\pulled apart some of it) and put in a pot w\gravy. Added to that a 22 oz can of Bush's grillin`beans (smokehouse traditional); 10 3/4 oz can of Campbell's tomato soup (condensed); 3/4 of the can filled w\water; 1 1/2 T chives and 1/3 c Sweet Baby Ray's gourmet BBQ sauce. Brought everything to a boil, then stirred in approximately 3/4 c Couscous (tri-colored: wheat w\sundried tomato & spinach) and removed from heat. Placed the lid on the pot and let stand for about 10 minutes or so......while I went to take a shower. Ready to eat when I returned....yummmo. Turned out to be very good...serve w\crackers or garlic toast. This would even be good w\a few dippers of it poured over a toasted bun to eat as an open face sandwich.....topped off w\cherry tomatoes, sliced onion, sliced jalapeƱo and shredded cheeses. Options that would also be good....substitute rice or mimi-bow-tie pasta for the couscous. -- >*>Cin(\0/)<*< ><(((*>Jesus<*)))><
