Penny, we also use roast beef to make bbq beef sandwiches. We shred up the meat, removing the fat and gristle as Scott said, and we add the bbq sauce (Sweet Baby Ray's) and a little yellow mustard. My hubby makes these and they are so good. Add the bbq sauce to the shredded meat and mix up, then add a little yellow mustard , and add more bbq sauce until the mixture looks "wet" enough. Heat it up slowly in a saucepan or in the microwave and serve on hamburger buns. -- Jennifer "Every Saint Has A Past, Every Sinner Has A Future"

Penny, I use left over roast to make beef bbq a lot. The beef is already flavored so all you need to do is remove any fat, gristle, and bone and shred it some and add the bbq sauce. Heat it (I like to do it slowly) and serve on buns. It is wonderful to freeze in foil lined muffin tins and wrapped in the freezer. If you want a quick sandwich unwrap and microwave, wala!

Mommy Mo, I used the nacho cheese sauce that comes ready to use in a can, El Mexicano brand , I think. I heated it up before I used it on the nachos. If I didn't have that ,I would use a cheddar/Monterey Jack blend or the shredded Mexican blend cheese that comes in a bag. -- Jennifer "Every Saint Has A Past, Every Sinner Has A Future"

I've been putting BBQ sauce on my hamburgers lately instead of ketchup. I'm going to save this recipe and try them out soon. Sounds very good and goes right along with my BBQ interest lately too

I'm going to try the Alfredo nachos at home soon. I'm thinking roasted red peppers, grilled chicken, and maybe some spinach mixed in the alfredo -like a spinach dip?  Any other suggestions? -- Jennifer When baking, follow directions. When cooking, go by your own taste.- Laiko Bahrs

Yesssss, lot's of different things you can have them top it with. They do the roasted red peppers, jalapeño peppers, black olives...etc. Whichever one you want or all of them. Wow, Cin- I've never heard of that! What else is on it-is it just chips, cheese and Alfredo? I'll bet it would be good with grilled chicken strips and roasted red peppers-yum. We go to an Italian plce that serves ''Chicken Nacho's''' and it has Alfredo Sauce on it along with the melted cheese..very good. -- Cin(\0/)
