Welcome to this friendly group, Vickie and Toni - it's great to virtually meet you! Thanks for the recipe, Vickie. I don't think I've seen a stew recipe that includes coffee. How would you say it contributes to the recipe? • Janet

:-Yesterday and after having worked all day in our vegetable garden; I was rushed to come up with a nutritious and satisfying meal. Here is my recipe for a great tasting and easy to prepare Beef Stew using Campbell's Soups and V8 Vegetable Juice[/b] b Ingredients: 1 -l b lean stew meat (thaw in microwave) 2 - tablespoons extra virgin Olive Oil (EVOO) 1/3- cup chopped green onion 2- teaspoons minced garlic (I use Spice World pre-minced) 1- cup brewed coffee (I use the left overs from the mornings pot. I suppose you can make a cup of instant coffee) 1 -10.5 oz Campbell's French Onion soup 1 -10.5 oz can Campbell's Beef Consomme' soup 1 -cup V8 Vegetable Juice 1 -4 oz can mushroom stems & pieces , drained (I use Giorgio Organic) 8-red or new potatoes cut into quarters (wash, do not peel) 12- pre-peeled baby carrots cut into thirds 2 -cups frozen mixed vegetables (corn, green beans, lima beans, or which ever combination you prefer) 1-teaspoon Creole seasoning (I use Tony Chachere's) 1/4- teaspoon freshly ground black pepper Utensils 3 Quart Covered Corning Wear Baking or Casserole Dish measuring spoons paring knife measuring cup(s) cutting board cooking spoon serving ladle convection oven, regular oven or microwave (I use my Bistro (Wolfgang Puck) convection/ pizza/ rotisserie oven which is the size of a toaster oven and sits on my counter; which I purchased at a bargain price at HSN.com) I have not tried the microwave for this recipe, however I am sure there is a way to cook this in the microwave) Directions Place beef and oil in cooking bowl, stir to make sure beef is evenly covered with olive oil. Place the baking dish, uncovered, in the convection oven. Cook 10 minutes at 375 * use the convection selection.** While beef is cooking, prepare your onions ,carrots and potatoes. Measure out all the rest our your ingredients, open cans and drain the mushrooms. Remove the baking dish from the oven to a surface that can handle the heat from the dish. Add onions and garlic to the beef, Stir Place uncovered dish back into the convection oven. Cook for another 5 minutes. Remove baking dish to a safe location that can handle the heat from the dish Add the next ten (10) ingredients stir, cover and place the baking dish back into the convection oven. Set the timer for one and a half (1.50) hours at 400* using the convection setting. Now go and take a bubble bath and have the kids and your husband set the table with soup bowls, spoons, forks bread plates and margarine ,butter, or olive oil and basil dipping sauce Remove the baking dish to the dining room table and call the family to dinner. ENJOY! I serve my stew with sliced whole wheat bread and margarine, but you can make biscuits or other bread if you so desire. For desert: Sherbet ,ice cream ,ready made pudding cups or fruit cups. Please note that I did not add salt to this recipe. It is NOT necessary.
