We went to a wedding in NY this weekend. At the cocktail hour they had all types of "stations." One station was Thai.. and they had satay and a peanut sauce on noodles... it was amazing!!! All the stations were so different.. from a pasta bar to a steamship table to even a "comfort foods" station.. mini burgers, fries and onion rings. They had a mashed potato station and a peking duck station.. Yummy!!!

Thanks Michelle & Scott, two great recipes! I love Asian Sesame Peanut Noodles, it's also great with chopped cashews! Mmm, I'm getting hungry just reading this topic.

Jennifer, Try it with out the peanut butter and just cut the water to 1/4 cup (a white wine instead of water should go nice). It should have a great asian flavor. I do something very similar and serve it cold.

Asian Sesame Peanut Noodles

Asian Sesame Peanut Noodles 6-8 oz. dry spaghetti whole wheat noodles 1/3 cup reduced fat peanut butter 1/2 cup water or chicken broth 3 Tablespoons ketchup 3 Tablespoons Hoisin Sauce 2 Tablespoons reduced sodium soy sauce 2 Tablespoons packed light brown sugar 1 Tablespoon rice vinegar 1 teaspoon sesame oil I cup of shreaded chicken 2 scallions (thinly sliced) Cook pasta according to directions. Let cool 10 minutes. Mix peanut butter thru chicken together in saucepan and heat until just warmed and well combined. Pour over noodles and sprinkle with scallions.

Food for thought... you can easily add good soy protein to this dish by draining and cutting extra firm tofu into cubes and popping it into the sauce just to warm through before serving. Peanut sauce is one of our favorite "Thai-influenced" sauces, and soy protein is extremely healthy. I've read several reports that consider 25 or so grams of soy protein to be heart-beneficial. This may or not be so -- but it is a great way to "beef up" this dish.

1/2 cup chicken broth (low sodium, low fat) 1 tbl fresh ginger, minced 3 tbl soy sauce, lite 3 tbl peanut butter *1 1/2 tbl honey 2 tsp chile paste (optional) 3 cloves minced garlic 8 oz Udon noodles (or spaghetti) 1/4 cup chopped green onions 1/4 cup chopped peanuts Cook noodles; drain. Meanwhile, in saucepan, combine broth, ginger, soy sauce, peanut butter, honey, chili paste (opt.), & garlic. Cook over med heat till peanut butter melts & is heated thru. Add noodles & toss to coat. Garnish w green onions & peanuts. *Note: I've also substituted the 1-1/2 tbl honey with Honey Mustard...but start w only 1 tsp honey mustard & adjust to desired taste.
