Janet, could you post the steak sauce recipe from Ina ,please? I heard that gorgonzola and other blue cheeses are great with beef , and I sprinkled a little bit on a New York Strip to try it and it was good. Jennifer and Angela, both of your recipes look delicious - especially for those of us who enjoy Gorgonzola! I've used it in one of Ina Garten's recipes for a sauce to serve with steak (layers of artery-slamming richness). The taste is lovely in a salad too, on pizza, and is an extraordinary match with the taste of pears. The milder version, Cambozola, is lovely for folks who aren't as fond of strong cheese, and is wonderfully creamy. • Janet

I like gorgonzola in a variety of dishes. Here is a fav of mine... 1 1/2 c. dry white vermouth 2 1/4 c. heavy cream 1/8 tsp. nutmeg 2 tbsp. salt 3/4 lb. fettuccine 3/4 lb. sweet gorgonzola cheese, crumbled 1 1/2 tbsp. fresh grated Parmesan cheese Fresh ground pepper 1. Bring vermouth to boil in heavy saucepan, reduce by one half. Add cream, bring to boil and lower heat to simmer. Season with ground pepper and nutmeg. Continue simmering for about 15 minutes (liquid will reduce by approximately 1/3). 2. Cook pasta in boiling water until tender. Drain and return to hot pot. 3. Remove cream sauce from heat. Stir in 1/2 of the Gorgonzola cheese and all the Parmesan. Pour over pasta, cook over medium heat for 5-8 minutes, stirring constantly until cream sauce has thickened slightly. Divide pasta onto 6 plates and sprinkle with remaining Gorgonzola cheese -- ~*~Angela~*~

Balsamic Chicken Pasta Salad

This was the grand prize winner in this month's Simple and Delicious contest " Beat the Heat" . It is so delicious! 3 cups uncooked bow tie pasta 4 cups cubed cooked chicken breast 2 cups chopped tomatoes-I love to use grape tomatoes 1/2 cup chopped red onion 4 bacon strips, cooked and crumbled 1/4 cup crumbled Gorgonzola cheese 1/2 cup olive oil 1/4 cup minced fresh basil 1/4 cup balsamic vinegar 2 tablespoons brown sugar' 1 teaspoon minced garlic 1/4 teaspoon salt 1/4 teaspoon pepper 1/2 cup grated Parmesan cheese Cook pasta according to package directions . Drain and rinse in cold water; transfer to a large bowl. Add the chicken, tomatoes, onion, bacon and Gorgonzola cheese. In a small bowl, whisk the oil, basil, vinegar, brown sugar, garlic, salt and pepper. Drizzle over salad and toss to coat; sprinkle with Parmesan cheese.
