This sounds really good. I haven't had sausage in a long time. I think I shall start a grocery list.

Creole Black Beans 'n' Sausage- slow cooker

I made this last night and it's very good.I made homeade cornbread with it. 2 pounds smoked sausage, cut into 1-inch slices( I used FarmerJohn Louisanna style hot smoked sausage-8 links) 3 cans( 15 ounces each) black beans, rinsed and drained 1-1/2 cups Each chopped onion, celery, and green pepper(I use red and yellow peppers too.) 1 cup chicken broth 1 can( 8 ounces) tomato sauce 1 can (14-1/2 ounces) diced tomatoes, drained 4 garlic cloves, minced 1 teaspoon dried thyme 1 teaspoon white pepper 1/4 teaspoon cayenne pepper 1-1/2 teaspoons sugar 2 bay leaves 1 tablespoon ketchup 1/4 cup fresh minced parsley hot cooked rice In a large skillet over medium heat, brown sausage; drain. Transfer to a slow cooker. In a large bowl combine all ingredients ,EXCEPT for the parsley and rice. Pour over sausage in slow cooker. Cover and cook on low 6 hours or until vegetables are tender. Stir in parsley about 30 minutes before serving. Discard bay leaves. Serve over a bed of rice. 10 servings -- Jennifer When baking, follow directions.
