These were a big hit with my family last night. My son named this as some of his favorite chicken. Really good with jasmine or fried rice and broccoli.(My son loved squeezing the oranges for me!

)
5-6 bone-in chicken breast halves, skin removed
2 tablespoons butter, melted
2 garlic cloves, minced
1 teaspoon dried basil
1/2 teaspoon seasoned salt
fresh ground black pepper, to taste
1 large onion, thinly sliced
1 navel orange, thinly sliced (plus enough oranges to yield 1 cup of juice)
Sauce:
6 tablespoons brown sugar
4 teaspoons cornstarch
1 cup freshly squeezed orange juice
6 tablespoons soy sauce
1/2 teaspoon ground ginger
Place chicken in a large baking dish, coated with cooking spray. Combine the butter, garlic, basil, seasoned salt and pepper; drizzle over chicken. Arrange onion and orange slices on top. Bake, uncovered, at 375 degrees for 50-60 minutes.
Make the sauce: (Note: Do not make the sauce until you are ready to baste the chicken with it. It will be the perfect consistency for basting. If you make it ahead of time and let it sit , it will become too thick and it will be difficult to baste the chicken with it.)
In a saucepan, combine the brown sugar, cornstarch, orange juice, soy sauce, and ginger; whisk until smooth. Bring to a boil; cook and stir for 1-2 minutes, or until thickened.
Drain the pan juices from the chicken; brush with the sauce mixture. Bake, uncovered, 20 minutes longer, or until chicken is cooked through.
Enjoy!
This chicken looks really pretty coming out of the oven and is a good meal to serve to company.
