I usually bake my chicken when I don't want to grill and when it's cooked through I might turn on the broiler to get the sauce to carmelize on the chicken. I often use the broiler when it's not nice enough to grill out. Works just fine! -- Lisa

Janet, I don't have one, either. We have access to one but we don't have the tools and stuff to use it. We do have a Foreman grill at home but again,. we're soooo lazy we have never used it! -- Worries go down better with soup. ~Jewish Proverb

Do you think this would translate well to a grill pan on the stove, or maybe cooking in the oven/broiler? I miss having an outdoor grill! • Janet

Honey Grilled Chicken Breasts

Yummy chicken marinade! The longer the chicken marinates, the fuller the flavor. 1/2 cup orange juice, preferably fresh squeezed 1/3 cup honey 1/4 cup lemon juice, preferably fresh squeezed 1/4 cup reduced sodium soy sauce 2 tablespoons minced or grated fresh gingerroot 12 garlic cloves, minced 1/2 teaspoon pepper 1/4 teaspoon salt 8 boneless skinless chicken breast halves (6 ounces each) In a small bowl, combine the first eight ingredients. Pour 1/2 cup marinade into a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for 8 hours or overnight. Cover and refrigerate remaining marinade. Coat grill rack with cooking spray before starting the grill. Drain chicken and discard marinade. Grill, covered, over medium heat for 5-7 minutes on each side or until a meat thermometer reads 170, basting frequently with reserved marinade. -- Jennifer "Every Saint Has A Past, Every Sinner Has A Future"
