Thanks! I don't actually cook with wine much after I messed up a recipe so long ago - usually use chicken broth or apple juice/cider. LOL I'm starting to crave seafood so I'll have to try this soon. -- Lisa

My kids want spaghetti and garlic bread tonight and I'm just not feeling it. Maybe I'll get some shrimp and make this too. Good excuse to buy a bottle of wine. Which kind of wine is best to buy to make this? -- Lisa

Lisa, You can use chicken, vegetable broth or apple juice, but the wine is better.

I've had this at Red Lobster and it's quite good. They put A LOT of sauce on it, though. I think I would be more conservative with the amount of sauce since RL has it just swimming in the butter, but it's still really yummy. -- Worries go down better with soup. ~Jewish Proverb

Cin, Here is my Red Lobster Shrimp Scampi. 1 Pound Medium Shrimp, peeled and deveined 1 Tbsp Pure Olive Oil (not extra virgin) 2 Tbsp Finely Chopped Garlic (you may used pre-chopped from the produce section of your grocery store) 1½ Cups White Wine ½ Fresh Lemon (juice only) 1 Tsp Italian Seasoning Blend ½ Cup Butter (softened) 1 Tbsp Fresh Parsley (chopped fine) To taste Salt and Pepper ½ Cup Fresh Grated Parmesan Cheese (if desired as garnish) Heat heavy bottom skillet and add olive oil, do not allow oil to smoke. Add shrimp and cook until tender and no longer translucent Remove shrimp from pan and reduce heat slightly. Add garlic and cook 2-3 minutes. Be careful not to brown garlic as this will produce a slightly bitter flavor. When garlic is cooked, add white wine. Squeeze juice from lemon in pan, and reduce wine by half. After it is reduced, add Italian seasoning blend Reduce heat to low, and slowly add butter, 1 Tbsp at a time. The butter should slowly melt into the sauce and create a nice creamy texture. If the pan is too hot the butter will separate Once butter is fully incorporated, add shrimp back into sauce, add parsley, and season to taste with salt and pepper. Serve with garnish of fresh cheese if desired. Scampi is great accompanied by fresh pasta

Red Lobster's Shrimp Scampi 1 cup white wine 1/2 cup unsalted butter, melted (do not use margarine) 3 tablespoons minced garlic 1 pound shrimp, peeled and deveined Paprika Parsley flakes Mix the wine, butter and garlic together and pour over the shrimp. Sprinkle with paprika and parsley flakes. Bake in a 350 dF oven for about 6 to 7 minutes, (Be careful not to overcook the shrimp). The shrimp is done when it has turned pink -- Cin(\0/) God is so big He can cover the whole world with his Love ~~~~and so small He can curl up inside your heart~~~~
