Jennifer, I think it's just a preference thing. The whole meal comes out tasting a lot like a chicken parmigiana without the cheese. Hey I bet you could add some cheese...that'd be pretty yummy too though it'd up the fat content unless you use reduced fat cheese. It's such a simple recipe and goes well with some garlic bread  I'll try and get a photo of it once I make it all up tomorrow.

Sounds good! So ,do you pour 1 or 2 cups of broth into the bowl? I am confused how much broth is used total-1 cup , 2 cups or is it your preference? -- Jennifer When baking, follow directions. When cooking, go by your own taste.- Laiko Bahrs

Hello all, I have this recipe on a card on my fridge as it's from Weight Watchers and it's just 4 points per serving and ultra delicious. If you like stewed tomatoes, this will be a hit, and it's pretty straightforward. I have made it at least 3 times and I'm planning on making it again this weekend. SAUCY CHICKEN 2 cups chicken broth, divided 1/4 cup seasoned flour (mixed with dash of salt and pepper) 4 (4 oz each) skinless, boneless chicken breasts 1 (16 oz) can stewed tomatoes 3 to 4 scallions, chopped Pour 1 to 2 cups of the broth into a wide bowl; place flour on plate. Dip each chicken breast into broth then into flour coating on all sides. Spray large skillet with non stick spray; cook chicken over medium heat turning once until browned on both sides. Remove from skillet and set aside. Add any remaining flour to the skillet. Cook stirring constantly until browned, then slowly add 1/4 cup broth. Cook until thickened. Gradually stir in remaining broth, cook stirring constantly until slightly thickened. Add tomatoes and scallions to skillet; bring to a boil. Reduce heat, return chicken to pan and simmer until cooked through. About 10 minutes. Weight Watchers points: 4 per serving (1 breast with sauce) Source: Winning Points recipes by Weight Watchers
