This was in one of my old TOH magazines and I made it this weekend-it was so good and a real kid-pleaser (grown-ups too!) Not too spicy. 1-1/2 pounds ground beef 4 cloves garlic minced 1 large onion, chopped 2 celery ribs with leaves, chopped 1 can (46 ounces) tomato juice-I used V-8 and it worked great 1 can (28 ounces) diced tomatoes, undrained 1 can (4 ounces) chopped mild green chiles, undrained 1 can (16 ounces) kidney beans, rinsed and drained 1 can (10-3/4 ounces) condensed tomato soup, undiluted 1/2 cup water 2 tablespoons chili powder 2 tablespoons brown sugar 1 teaspoon prepared yellow mustard 1 tablespoon Worcestershire sauce 3 bay leaves salt and pepper to taste 1-1/2 cups uncooked elbow macaroni 1 tablespoon chopped fresh parsley Garnishes:Shredded cheddar cheese, sliced green onions, sour cream Cook macaroni according to package directions. Drain and set aside. In a Dutch oven, cook the beef, garlic, celery and onion over medium heat until meat is no longer pink; drain. (I added a tablespoon of olive oil to my pot , to cook the meat and veggies in, and I seasoned the beef with Emeril's Essence, Hamburger seasoned salt , Worcestershire sauce and pepper.) Add the tomato juice, tomatoes, green chiles, beans, soup, water, chili powder, brown sugar, mustard, Worcestershire sauce, bay leaves , salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 30 minutes. Stir in macaroni and parsley. Cook, uncovered, 5 minutes longer or until heated through. Discard bay leaves before serving. Yield:4 quarts Ladle into bowls and top with cheese, onions, and sour cream, if desired. I made Bisquick garlic-cheddar drop biscuits to go with it and they went together really well.
