I love using Roma tomatoes in spaghetti sauce; they have such a hearty flavor. Great recipe! Thanks for sharing. :)

This is my special spaghetti sauce, I named it this because, literally translated, it means "Spaghetti with the Best". (I actually won a desperate housewives cookbook two years ago with this, so, hope y'all enjoy)

--16 OZ. plum or roma tomatoes, diced (or a 24 oz. can diced tomatoes, drained)
--special dried spice blend (rosemary, Morton's Nature's Seasoning, red pepper flakes, Lemon Pepper, Basil, Oregano, cracked black pepper, one bay leaf)
--EVOO
--meatballs (however you like to make them)
--2 cans Progresso Hearty Tomato Soup
--5 cloves garlic, minced
--1 lb. spaghetti

Drizzle an oven-safe pan with EVOO. Spread tomatoes in an even layer on the pan. Sprinkle spice mixture over tomatoes, drizzle EVOO on the top. Put in oven under the broiler for 15 minutes, stirring two or three times during this process. Add tomatoes and all of their juices to the progresso soup in a large bowl, along with the meatballs. Microwave for 5 minutes. Serve with noodles.
