I made this tonight after my son's constant begging-"mommy the picture looks sooo good!" LOL -it was great!
We are having the leftovers tomorrow.It smells and tastes like pizza and the spaghetti makes a unique and delicious "crust".
2 eggs
1 cup milk
1/4 cup grated Parmesan cheese
1 package (16 ounces) spaghetti
1 fresh tomato, chopped
2 cloves garlic , minced
1 green bell pepper, chopped
1 pound ground beef
1 jar spaghetti sauce(26-28 ounces)
1 package (3-1/2 ounces)sliced pepperoni
1 can ( 4 ounces) mushrooms stems and pieces, drained
1/4 cup chopped onion- I recommend using red onion
Lawry's Garlic Salt, to taste
2 cups (8 ounces) shredded mozzarella cheese
1 cup ( 4 ounces ) shredded cheddar cheese
more grated Parmesan, to taste
pinch dried oregano leaves-crumbled
In a large skillet, cook tomato, garlic , bell pepper and ground beef until no longer pink; drain. Set aside. Cook spaghetti according to package directions;drain. In a large bowl, beat eggs, milk , and 1/4 cup Parmesan cheese. Add cooked spaghetti; toss to coat. Transfer spaghetti mixture to a greased 13-in.x9-in.x2-in. baking dish. Top with ground beef mixture, then spaghetti sauce, pepperoni, mushrooms, and onion.
Sprinkle with Garlic Salt to taste. Bake, uncovered, at 350 for 20 minutes. Sprinkle with cheeses and oregano. Bake 10- 15 minutes longer, until cheese is melted and light golden brown. Let stand 15 minutes before cutting. 8 servings
This was great with a salad. Pizza , spaghetti , and salad-what can be better?
