Hey all - just wanted to let you know what a HUGE hit this was at my house! I did end up cooking it layered over the potatoes and carrots and it worked out really well. I didn't have any Heinz 57 in the house (when on earth did I run out of THAT??) so I substituted some of that brown cooking boquet stuff and Jack Daniels BBQ sauce instead and cut back a wee bit on the balsamic vinegar. It was GREAT - I only wished I'd added some mushrooms... but I really like mushrooms. And I didn't need to thicken the gravy at all. Jen is right, the leftover sandwiches are GREAT!! Thanks again for a nice change from my usual pot roast! Gibber

This sounds so good, and it obviously went over well with your husband.  I've never heard of cutting a roast over 3 lbs in half before crock potting it - good tip! Now I want pot roast. -- Lisa

Hey Gibber! Crock pot recipes recommend cutting roasts over 3 pounds in half for safety reasons. They say the middle of the roast will remain at too low of a temperature for too long a time if it's not cut in half and this can harbor bacteria ......I do it to be safe. Actually, it's easier to brown the roast when it's cut in half. I haven't made it with carrots and potatoes in it because I like mashed potatoes with my pot roast. I don't see why you couldn't though, if your crock pot is big enough. It might take a little longer to cook though. I would make a "bed" out of the carrots and potatoes and put the roast on top and pour the sauce over all. Hey there Jennifer! Thanks, I have a pot roast in the freezer I've been wanting to make but was tired of my "usual" recipe. This sounds great! A few questions though: 1) why do you need to cut it in half? To fit in the pot? 2) have you tried cooking this with any potatoes/veggies? I'd like to cook everything at once, but don't want to mess with the flavor... Thanks for your advice! Leslie

Tender Pot Roast with Great Gravy

So good! Serve with mashed potatoes or noodles. 3-4 pounds pot roast (I used chuck roast) 2 tablespoons olive oil salt and pepper 4 garlic cloves minced 2 shallots ,sliced (or use an onion) 1 package brown gravy mix 1/4 cup Heinz 57 steak sauce 1 tablespoon Dijon mustard 1 tablespoon Worcestershire sauce pinch of sugar 2 bay leaves 2 tablespoons balsamic vinegar 1/2 cup water 1/2 cup red wine Cut roast in half. Sprinkle with salt and pepper. Brown roast in olive oil on all sides. Drain and put the roast in a slow cooker. Top the roast with garlic, shallots and bay leaves. Combine the rest of the ingredients in a bowl and pour over roast. Cover ;cook on low 6-8 hours or until meat is desired tenderness. Thicken gravy if desired. Enjoy!
