Yum! Ive never made twice baked potatoes, but I cant wait to give this one a try. Sounds like something my "Meat & Potatoes" husband would enjoy! -- ~*~Angela~*~

"Twice Baked" Potato Casserole

This is a great way to get that twice baked taste much faster and easier. I have made this alot-it's a family fav. 3 cups hot water 1/4 cup butter or margarine 1/2 cup milk 1 package (7.6 ounce) roasted garlic flavor instant mashed potatoes 1 cup sour cream 1 cup shredded cheddar cheese-I use sharp cheddar 1/4 cup grated parmesan cheese 4-6 slices bacon,cooked and crumbled 1 small tomato,seeded and chopped fine 3-4 sliced green onions or chives Preheat oven to 375 . Spray a square 8 or 9 inch baking dish with no -stick spray. In a saucepan,heat water,milk,butter and a pinch of salt(optional), to boiling.Remove from heat and stir in both packets(entire box) of flavored potatoes,just until moistened. Let stand one minutes. Fluff with fork. Stir in sour cream.Fold in 3/4 cup of the cheddar cheese and a pinch of the parmesan cheese. Spread into baking dish.Top with remaining cheddar,then onions,then tomatoes ,then bacon.Sprinkle with remaining parmesan cheese. Bake uncovered 20 minutes. Tip ;sometimes I like to use some ranch in place of part of the sour cream.-yum. This goes great with steaks! -- Edited by 2864590 at 08/22/2007 3:31 PM
