Lisa, This came out of desperation of last year. I was going to make potato salad for 20 people and then was told there were only 10 going to show up. So I had a lot of cold cooked potatoes. I used half in the salad and the next day I came up with this to use the rest. I now make them on there own. I love sour cream to put on them but now take cottage cheese and put it in the blender with a little lemon juice and blend it until it is smooth, it keeps in the frig for over a week. You post the yummiest sounding recipes!  This sounds kind of like twice baked potatoes but much easier in the long run. I love almost anything involving potatoes, bacon, and cheese. LOL -- Lisa

The potatoes, use red or gold, if big cut in half (fingerling potatoes -the ones that are the size of your thumb and come in different colors work). Boil in salted water, until cooked, but not falling apart. Drain and let cool (spread out so they dry out). This can be done a day or two before, kept in the frig. Pre heat oven to 400. Oil a baking pan or spray with pam (I cover the pan with tin foil for easy clean up), smash the potatoes with the heal of your hand in the baking pan, to an inch to 3/4 inch. If they are cut smash them with cut side up. Sprinkle with a little olive oil or spray the tops with pam. Sprinkle with bacon bits and pepper. If you don't use bacon add some salt. Sprinkle them with some Italian Cheese (cheddar works but add it once the potatoes are done and bake a min. or two to melt it). Bake for 15-30 min. It will all depend on the water content of the potatoes - it may take a bit longer. Bake it until the edges start to brown. These can be done ahead for multiple meals. They store well in a plastic bag in the frig. Just reheat in the oven, the microwave should work. I have never had them last long enough to try freezing them. but it should work.
