Instant is rice that has been cooked and then dried... Real rice is raw dried rice. -- ....... eat mo' grits

What's the difference between the two -- is it just water content of the rice itself? I'm a little confused. I've only ever made instant or boil in a bag (which I really don't like because the bag one comes out just weird tasting and bloated.)

A long time ago I used to use nothing but Minute Rice because I didn't think I could make "real" rice. Then I got my rice cooker and it does all the work for me as long as I measure the correct ratio of rice and water. Love it.

I'm glad to help, real rice has so much more flavor than instant. Try brown rice for even more flavor (yes rice has flavors other than just starch and it is better for you). I personally like a brown rice in the mexican aisle (it has a little nutty flavor and even better brown in a little butter). I have been cooking for 53 years, so I have tried a lot of substitutions with varying results.

Scott..thank you so much for that info.. I have just printed it out and added it to my recipe box.. I often have a bag of "real" rice..and i always dread buying instant rice but I shy away from recipes that call for instant rice because I don't have it on hand. I tried figuring out how to substitute real rice many years ago with little success. You have helped me with that dilema.

I've noticed that almost all the Meal Mail recipes calling for rice specify "instant rice". I abandoned instant rice years ago after several horrendous experiences trying to remove the cooked-on rice. (Insert your favorite Inept Bachelor joke here.) So if I substitute regular rice, what kind of modifications should I make to the recipe? Thanks in advance for any suggestions. Carl
