Hi Andrea, and welcome! I am very lucky to have veggie-eating kids. They love steamed broccoli and asparagus, corn, peas, and even green beans. Their friends have peer-pressured them into not liking spinach but they both liked it when they were babies so I think they'll come around again someday. Their favorite veggies are either fresh or frozen, except for corn which they will enjoy from a can. There's just something about canned veggies that don't taste good to any of us around here. Beans that go into soup or burritos or enchiladas are fine from a can, but I even make my own refried black beans these days. We steam fresh asparagus, broccoli, and cauliflower, and I admit to occasionally sprinkling some shredded cheese over the top. I have yet to master my mom's cheese sauce. Now that we're getting closer to fresh veggie season, maybe it would be a good idea to take them to the farmer's market. Our local market will let kids sample the produce and they often choose to buy things like sugar snap peas, fresh tomatoes (I know you said you don't like tomatoes but I had to mention it), broccoli, and fresh sweet corn. They even decided to try bean and alfalfa sprouts (which are pretty good on sandwiches in place of lettuce)! :^O I am very quick to tell them that their tastes could change when they least expect it, too - one day they may not like lima beans, and the next time they try it they might. Their favorite thing to do, though, is to put some frozen veggies (yep, straight from the freezer) into a cup or bowl and they'll eat them as an after-school snack. Peas, corn, even mixed veggies (with lima beans!) disappear that way.

Good luck! It sounds like you are well on the right track already.

    Hello Andrea, and welcome!

Wow, you're already well on your way to helping your kids, just by stretching your own horizons into new veggies! I remember those days of canned vegetables too (ugh, I can still recall the smell of canned peas, yuck!) but discovering the beautiful tastes and colours of fresh produce has made veggies SO much more appealing!

How old are your children? What vegetables do they actually like (or in the case of your son, at least tolerate)? Do you like tomatoes and onions in any form - such as in sauce, on pizza, with meatballs and so on?

There is such a great community of cooks here, and lots of Moms (and Dads) who have met the challenge of cooking for kids, I'm sure you'll get lots of great solutions! • Janet

I grew up with a mother who cooked out of a can or a box. That is the extent of my cooking skills as well. Unfortunately, my kids aren't getting the picture that I want to branch out. I don't want to mask anything by slathering cheese all over it. I like the flavor of the food, not the condiment. My daughter will at least TRY something, but her big brother will have NONE. I have finally gotten to like broccoli, spinach, mushrooms etc. I still can't stand tomatoes or onions. I grew up with vegetables that came out of the Green Giant cans. HELP!!!!
