Growing up, back in the day (1976), I remember a friend screaming for me to pull into the local 7-11 store, he ran in, straight to the back, grabbed a carton of eggs, and proceeded to down all 12 raw and unpaid for. Apparently they sooth ulcers something fierce.

Ooh thank you so much, this was interesting. I'm going to tell my mom about it (she's in her 70's) -- I think maybe she is giving me advice from when she was a kid. She told me once she remembered eating raw eggs as a kid because they didn't worry about salmonella since they didn't have any contaminated eggs back then. INteresting, isn't it?

Mom,
Real Mayo will separate when frozen. Miracle Whip can be frozen. If you are making where Mayo is an ingredient it is probably use for its oil and should survive freezing.

I'm wondering if you were remembering it is not safe to freeze mayo. This is what I was always told... never heard any problems with heating mayo.
Does anyone know if this is true that you can't freeze items with mayo in it?

I think we were just being warned not to use mayo on an open faced pizza (as in spreading it on in lieu of the tomato based sauce) cause it breaks down into an unappetizing mess - thats all.
Cook with mayo all you want.... mmmmm.

You can definitely heat mayonaise. Paula Deen has alot of casserole recipes with mayonaise in them. I have reheated hamburgers in the microwave with mayonaise on them.
I also have an artichoke dip recipe that calls for 1 cup or more of mayonaise and you bake it and no one has gotten sick from that.

Best Answer - Chosen by Voters 1)You don't have to worry too much about mayo you bought in the store. It's pretty much idiot proof. It's pasteurized, PH balanced, and preserved to death. It takes quite a bit to contaminate mayo these days. Most of the mayo concern is carry-over from the days when it was made fresh with eggs riddled with all kinds of live bacteria. Look at a jar of mayonnaise. The expiration date is so far out that there can't be any real concern about protein based contamination. I am not saying that you should be reckless with the mayo. But for the sandwich, I would be more concerned about the meat. If you feel safe to eat the meat, don't worry about the mayo. You can cook mayo. There are a lot of recipes out there that use mayo as a component or even a glaze. It won't look the same when you heat it, but it will taste fine. Enjoy 2)Its fine. Never had a panini? You can cook with mayo with no problems. It's leaving it out exposed to room temp air for a long period of time that you're going to run into problems. In the pizza thread someone mentioned that you shouldn't bake mayo. My mother had told me many years ago that if you heated up mayo, it turned into poison and could make you sick.
What's the scoop on heating mayo? I've seen recipes specifically instruct you to bake with mayo or heat it, so now I'm confused.
It sure doesn't look appetizing once it's heated, as I found out after re-heating a take out sandwich in the microwave. The mayo went from off white creamy to transparent oily looking.
Is it safe to heat mayo? Under what circumstances? What's the secret here? Thankies!!
