My post about 'substitutions' really applies here - in regards to the amounts of cottage cheese and cream cheese anyway - I wouldn't add any extra (or less). This was the result of a loooong search for the taste I wanted. Hope you enjoy. -- ....... eat mo' grits

Hey Kethry, I think I've tried every which way but loose to make Alfredo. The ones with heavy cream or whipping cream (I couldn't get to thicken per recipe) and the ones based on cream cheese (seemed to make the meal too 'heavy'). I've settled for a crossbreed: Fettuccine Alfredo 16 ounces fettuccine pasta; (12 to 16 oz) 1 1/4 cup milk 2 tablespoons all-purpose flour 1/4 cup butter; softened (opt) 6 oz cottage cheese; small curd 4 oz cream cheese; softened 1/2 cup grated parmesan cheese; (1/2 to 3/4 cups) 1/2 teaspoon garlic powder 3 teaspoons dried onion; minced salt & pepper to taste 2 cups chicken breast; diced cooked (opt) Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 9 to 11 minutes, or until al dente; drain, and set aside. In a food processor or blender, place the milk, flour, cottage cheese, cream cheese, optional butter, garlic powder, minced dry onion, salt and pepper, and Parmesan cheese. Blend until smooth. Transfer the blended mixture to a saucepan over medium heat. Mix in the chicken, and cook until heated through. Serve hot over pasta. Sprinkle with additional parmesan cheese as desired. (Note: If too thick, thin with additional milk. May want to add the parmesan after the sauce and chicken are heated through - it tends to stick to pot bottom. To cook chicken breast - nuke covered on hi for 10-12 minutes) (May want to subst: shrimp, crab, scallops, or turkey for the chicken. Or may want to add some sauted bell pepper, zuchini, cauliflower or broccoli) -- ....... eat mo' grits

Olive Garden is one of my fav's.....although my Hubby's is Red Lobster, so we went their last evening and I got to have those ''Cheddar Bay Biscuits'' with Uncle Walt's Butterfly Shrimp and Shrimp Scampy.....yummo. My Hubbly had his usual.....crab legs. -- Cin(\0/)

Thanks for the recipes.  Guess I'm going to have to buy some cream for the next time I make the sauce. Apparently, I also need to buy "baby" shrimp, as hubby says they are more tender. -- Do not meddle in the affairs of Dragons..for you are crunchy and good with ketchup.

I saw something one time that claimed to be the secret recipe for Olive Garden's Alfredo sauce... this one looks good.

I usually buy Butoni refrigerated Alfredo sauce- it's very good. I also like the one in the jar by Bertolli.I don't make it often because it's so rich. I made Alfredo mashed potatoes awhile back with Italian pot roast and they were incredible! For that I used the refrigerated Alfredo sauce. I always add garlic to my Alfredo otherwise I think it's so bland. The best Alfredo sauce is the Olive Garden's! Their Seafood Alfredo is great! -- Jennifer When baking, follow directions. Kethry, this is the recipe I always use and recommend. 1/4 c butter 1 c heavy cream 2/3 c parmesan cheese s @ p to taste Melt butter in skillet.Add cream and bring to a boil. Simmer for 5 mins, stirring, then add the Parmesan and s @ p to taste. Turn off heat. If you want to make Alfredo's Fettuccine, cook the pasta till al dente, drain,turn the heat on under the cream sauce and add the pasta. Toss till coated in sauce, taste for seasoning and serve with extra grated parmesan.

I made Alfredo Sauce the other night, but didn't have any cream in the house and most of the recipes I found online called for cream. The one I made had cream cheese instead, and it was okay, but I'd like to get some "tried and true" recipes from you all to try next time. -- Do not meddle in the affairs of Dragons..for you are crunchy and good with ketchup.
