Once again Scott astounds me with his brilliance... fried squash, I LOVE it. Thanks ALL - this is just what I was looking for, I've got lots of new ideas for my tired old brain. And just in time, I finally broke down and bought some, couldn't resist the deal, haha!! Thanks again, and I'll check back for more ideas! Gibber

Hi Jennifer! Thanks for the compliment! I will start my son on meat soon with a food mill. It started with my daughter refusing to eat "Chicken and Rice" store bought baby food. I tasted it thinking, how can you make chicken and rice taste bad, but they did. Now it's just reach in the freezer, grab a cube of something and warm it up. Right now his favourite is carrots, apples, pears and rice cereal. Plus, I can also use the same cubes in soups, stews, sauces and mashed potatoes to add more flavour!

Hi Carol, I've cooked acorn and white swan squash with butter/margarine and brown sugar. I will have to try the butternut squash that way too! Last night we had leftover squash mixed with pureed carrots and it was delicious! My son is 6 months old, so we have lots of pureed carrots, pears, apples, and squash. My 3 year old is at least trying the squash, but would rather play!

Hi mb, This is how my mother-in-law taught me how to make squash. Only instead of adding margarine and tarragon, she used brown sugar and butter. I'm not a fan of squash, but my husband loves it made this way. Maybe next time I make it I'll try it your way. -- Carol B.

Gibber, You can use it just like you would sweet potatoes in recipes. I replace the sweet potatoes with butternut squash at thanksgiving some times. I use to have a recipe that had it cubed and browned in some butter, with some cubed potatoes and carrots. But I can't find it. I remember it was better the next few days. I think it would be good cubed and roasted with a bunch of root vegetables. Just toss with a little olive oil and some salt and pepper. They are always better the next day. A southern friend fries it. Fried Squash 3-5 pounds butternut squash - peeled, seeded and sliced 1 egg, beaten 1/2 cup milk 1/2 cup all-purpose flour 1/2 cup cornmeal 1/4 t salt 1/4 t ground black pepper 1 pinch garlic salt (or more if you like) oil for frying Combine egg and milk together in a small bowl, mix well. In a second bowl, combine flour, cornmeal, salt, pepper and garlic salt. Dip squash slices first in the egg mixture, then dredge the squash in the dry mixture. Heat 1/2 inch of oil in a deep skillet over medium heat. Fry squash until golden brown Variations, Use prepackaged cornbread mix for the flour cornmeal and spices. For a lighter batter use self rising flour and corn flour. To sweeten the batter add some maple syrup to the milk Works well with zucchini (no need to peel) and green tomatoes For more crust double dip.

Hello Gibber! We recently peeled, cubed it, boiled and mashed it with a bit of margarine and tarragon mixed in it. It turned out great! I also like to toss a few cubes into my stew, spaghetti sauce or mashed potatoes for extra flavour without a lot of calories. Enjoy!

Hey all! Tis the season for butternut squash. I'm seeing it in the grocery store on special and I'm itching to buy it but really know of only two ways to cook it, which is to slice it open and roast, stuffed with savory sausage and some brown sugar; or make soup. Both are tasty, but I'm looking for something new... maybe a side dish that reheats well? Thanks in advance for any advice!! Gibber
