Ohh, the pudding in a pie would work great! At least it travels well, so that would be a plus. I could put cool whip or something on top to make it "fancier" LOL. Your recipe sounds great Gibber! Those would be great even warmed up for a breakfast and help them out even more!!! -- ~*~Angela~*~

Hey again Angela! Wow, I'm glad mom didn't let the baby "cook" any longer (har har... OK, so I'm a sucker for really bad puns). I was thinking of making this today, one of my faves, since I don't usually have a sweet tooth but when I do I want it NOW! Unroll a puff pastry sheet (or one of those tubes of pizza dough - I ususally have one or both in my freezer or fridge) and spread it with butter, sugar & cinnamon. Slice it into sticks or squares or whatever, then bake. While it cooks you can whip up some powdered sugar and water to make a glaze to dunk. Sorry I don't have a more precise recipe, but I'm sure we've all made this before... it was just on my mind today and it fits the quick and easy description. btw, I made a crockpot of chili tonight with a couple of cans of V8 dumped in for the veggies!

That's a big baby!! Wow. No wonder she didn't want to come out! I'm glad they're all doing well; how kind of you to help them out. As for desserts, Jello pudding! (LOL) OK, maybe not, but you could make a chocolate pie with it and that would probably travel ok. Or put it in pop-sicle molds and make your own jell-o pudding pops. Trail mix is a salty-sweet dessert/snacky thing anyone could enjoy any time - and if mom is nursing she might need the easy protein fix between meals. My kids just walked in the door from school so I'll brainstorm and see if there is anything else I can add. -- Lisa

Oh boy it's been a busy week. I've been trying to help out the new mommy as much as possible! Mom and baby are doing well. She had a beautiful "little" girl on 10/2/09. Sophie Grace was born weighing in at 10pounds 11ounces and 22.5inches long! I tell ya, the baby came out half grown! The meals have been a blessing since she had a rougher time with her Csection. I've used almost every single idea here and she is SOO appreciative! Another quick question....None of our meals yet have included a dessert. I actually stopped and picked up an apple pie yesterday on my way because it finally dawned on me. The husband was EXTREMELY happy as we find out he has a big sweet tooth! LOL. Are there some good, easy and cheap dessert ideas that travel well and may last a few days or can even freeze?? Gotta make Dad happy too! LOL -- ~*~Angela~*~

Scott, you continue to be my hero... V8 with bloody mary's, you so rock! I was actually talking about the new line of soups that V8 puts out in cartons - I've currently got butternut squash (well not anymore, I just ate it tonight with sandwiches), vegetable, and red pepper tomato in my cabinet. They're ready to go, meaning you don't need to add water or anything, and the cartons will keep for a few days if you don't use the whole thing. They're pureed down to smooth, so even the veg soup is like a sauce. I've been stirring them into any sauce that "matches" (ie - butternut squash goes into mac n cheese - but go easy - or any kind of cheesy/white-ish pasta sauce; the red pepper stuff into jarred spaghetti sauce or with a tomato-y Hamburger Helper, etc, etc.). I throw whatever is left into whatever I'm making; the kids don't know it and I walk around all smug knowing I've slipped veggies into their day. Of course, you pay for the convenience, but I've decided it's worth it rather than letting fresh veggies go bad until I figure out how to use them... that's why I thought of the new couple, better for them that they don't have to shop/prep veggies? If it was a gift from someone else they wouldn't need to worry about the cost though. I also got a little excited and forgot the whole POINT of the food train: providing ready-made dinners... Angela, I'll try to come up with some of my favorite "one-step" recipes. If the kind food train folks do the prep ahead of time I'll bet we can think of a bunch of stuff that would last them months! And Is the baby here yet? You said C section was planned last week, I may be behind the times! Best to the new parents from me, please!!! Gibber

> Oh, and how DO you "spruce up" Hamburger Helper?? I've never heard of doing that! > Angela, I will keep you in my thoughts. Near the bottom of the box they have addition to "make it your own". I like using some veges in the mix. Yes I use HH from time to time, when it is on sale for a buck you can't go wrong. I do make my own with a can of soup (cream of anything, cheddar, what ever would go with the ground beef) some cook pasta or rice. But by the time you pay for the pasta and the soup, it comes up to more than a buck. The same thing with chicken and tuna helper. Gibber V8 is a Campbell's product. I use it in my chili and cabbage soup (it is good in a bloody mary too).

Ohh, I should have put this in the other post, but here goes LOL....speaking of this family, her Csection is set for 7am tomorrow morning. Baby is being stubborn and doesn't want to come out! lol. If you wouldn't mind good thoughts tomorrow, I know they'd appreciate it. She's had some complications in the last week, so they're quite anxious! -- ~*~Angela~*~

Ohhh Gibber what wonderful ideas you brought up! It just never dawned on me to think OUTSIDE frozen dinners!!!! Of course, that brings me to another question....I know all about stocked pantries, thanks to the recent thread we had, but........... (always a but, eh? lol), What are EASY to fix ideas that I can put in a box of "goodies" for them? She's found out she's having a Csection so she's going to be extra sore for a while. Love the Mac & Cheese, Campbells soups, etc, but I know none of us wanna live off Mac & Cheese, soup and stuff like that! LOL I'll def. toss in quite a few soups because I know her hubby loves the Campbells Chunky Soups and she likes the lower fat ones. I will sure pass along your info about WIC, immunizations at the Health Dept. etc. I know they are worried sick about money already. Oh, and how DO you "spruce up" Hamburger Helper?? I've never heard of doing that! -- ~*~Angela~*~

Hi Angela, Wow, what a great program!! I know I would have really appreciated it when I was a new mom. I hope I'm not too late for ideas, but Dad losing his job soon really struck me. I think extra frozen dinners would be fantastic, but was wondering about their freezer space? Maybe you could coordinate some non-frozen items too, like boxed mac n cheese with a box of that V8 butternut squash soup? I've been stirring the soup into the pasta (a la Jessica Seinfeld cookbook) and it's easy AND I know there's some nutritional value. Those V8 boxes work well with Hamburger Helper meals too (sorry if that's not a campbell's product...). Also, don't know if Dad losing his job means no health insurance, but even if not a new baby means frequent trips to the doc for immunizations, with co-pays each time. The Dept. of Health will administer FREE immunizations for children, whether you have health insurance or not (at least in my state - check yours). Also, check into WIC (Women and Infant Children) - most states have some variation of the program, and it exists to help provide the proper nutrition and healthcare for infants and their mothers; depending on the situation the family may qualify for the food plan, etc. Even if not, the Dept of Health has low-budget-high-nutrition menus available for free on the site. Hope you don't mind my 2 cents', but I can't stop thinking about Mom and Dad, and they shouldn't have to worry about how to feed the baby on top of everything else. Gibber

I think you could use the lowfat soups and cheese for the Chicken Tater Bake. It's recommended that you don't use lowfat items for the Creamy Lasagna Casserole, though. -- Jennifer "Every Saint Has A Past, Every Sinner Has A Future"

I love the Chicken Tater Bake recipe. May have to make a batch for my family AND theirs! lol. Do you think it would taste just as good using Low Fat soups/cheese? The Stir Fry idea is WONDERFUL and I had NEVER thought of that being a freezer meal. I bet I could freeze everything in separate bags and even take along a box of rice AND even some flour tortillas and they could do a regular rice/stir fry or using the chicken/meat/veggies to make Fajitas! Things I would have NEVER thought of without all you here at campbells!!! Jennifer...I figured I was kinda out of luck with the fried fish. lol. I'll have to try your idea of using a paper bag instead of a casserole dish type bowl! I bet that would be a big help! Hmm, have you seen the paper paint buckets at the hardware stores? They have a paper lid, and looks very similar to KFC's chicken buckets. I bet that would work!!!!! May have to give that a try for our picnic this weekend! LOL -- ~*~Angela~*~

> > A question on the fish.....as for fried fish, what is the best way to keep it from getting kinda soggy during transport? Also, is there anyway to do a freezer fish dish? > > -- > ~*~Angela~*~ Angela, there isn't a way to keep fried fish or chicken as crispy as when it's first cooked but, you can transport the fried fish or fried chicken in paper bags,as the excess grease will be absorbed by the paper. I do believe that is why KFC's chicken comes in a paper bucket. -- Jennifer "Every Saint Has A Past, Every Sinner Has A Future"

This is such a great idea. I'm sure the family will be beyond appreciative of such generous help. What a scary time for the father to be out of work. Although it may be a blessing for him to be home to help out and spend time with the new baby at least for a while. I think enchiladas (either chicken or beef, or even bean enchiladas work) are a good option since they can be frozen and baked or separated into individual servings. They can be made as spicy or as mild as you want so even a nursing mom could partake. Stir-fry veggies can be stored in a freezer, as can chicken breast or beef cut into strips to take out for a quick stir-fry meal that cooks up quickly. Good luck to the new family! -- Lisa
