We like them for dinner as well as for breakfast too....I put all different kinds of ingredents and spices in the batter to change them up. I have used beef, chicken, tuna, shrimp, crabmeat, onions, potatoes,.....oh just about every kind of veggie...etc...and avout evry kind of cheese there is Sometimes when we are going to the condo in for the weekend, I'll make several muffin pans of them, put them in zip-lock bags and pop them in an icechest to take along. I put them in the frig when we arrive then in the mornings we just place some in the microwave, heat them and you've got breakfast in a flash......just make some tost or biscuits to go with them if you like. -- Cin(\0/) -- Edited by 2932550 at 01/10/2008 3:48 PM

Just go ahead and pour your mixture into mini (or regular size) muffin tins and bake frittatas, they taste wonderful and will be picture perfect for you. I like both sizes of muffin tins, the grandgirls love the mini-tins the best though. -- Edited by 2932550 at 01/07/2008 2:53 PM

*sigh* even with the link and tips my omlete still wasn't picture perfect. Oh, well I'll still eat what my DH calls my "almost omlete". Thanks everyone!

Sometimes mine turn out perfect and then other times I end up doing the scrambled thingy when it's just not working. I blame the eggs......or should I blame the chicken -- Cin(\0/)

1hotbiscuit, I think DJ must be right about the art, and that reminded me of an Alton Brown Good Eats episode on the Food Network called Zen and the Art of Omelet Maintenance. He went through all the steps in great detail, and the reader reviews at the site give some extra hints about individuals' variations for personal taste. Bisquit, I think there's an "art" to it! Like playing golf. My husband always makes perfect omelets...always filled to perfection, fluffy, folded neatly. We have an omelet pan, but he doesn't use it. It must be in the wrist. He's reading right now, or I'd ask him. Then again, practice makes perfect!

The other thread got me thinking. How do you make the perfect omelet? Fluffy eggs, perfectly folded around sauted veggies, a little cheese sprinkled on top  . The omelet guys at the resorts make it look sooo easy  . My omelets always turn into scrambled eggs w/stuff in them. I want to make the perfect omelet!
