No asparagus here either yet! I'm hoping soon, these sound great!

Our local asparagus hasn't arrived in the markets and stores yet, but I'm looking forward to it - such a Springtime classic. Still, there's some excellent imported asparagus around that tastes good, although of course it just doesn't ever get to the low price or high freshness that makes local so appealing!

Thanks for the recipe, Camilla, it looks like a winner! • Janet

That's funny, "Happy Vernal Equinox!" hee hee. It is strange how people through the years have found things to celebrate through the seasons. Even winter, in all of its sniffles and blizzards still has snowmen and snowflakes and Christmas and a nice festive feeling. I don't usually celebrate spring per se but it's a lovely season with all of the new growth and rebirth. Time to learn some new recipes;)

Camilla this looks delicious! I would fall over if I found asparagus that cheap! :O It's almost $4.00/lb here last time I checked! Yikes.

Happy Spring, everyone! I'm hoping it's as beautiful a day where you are as it is in my neck of the woods. In addition to it being a gorgeous day, I was thrilled to find that aspargus was/is on special at my supermarket for a mere 94 cents a pound (I kid you not!).

Now, do try one of my favorite ways to serve it. It involves pufff pastry, of course:

    Puffed Asparagus Spirals
Sprinkle 1 thawed puff pastry sheet with finely grated parmesan cheese (or any hard cheese you prefer--Asiago, Romano, etc), then cut lengthwise into 15 strips. Wrap each of 15 asparagus spears with a pastry strip; season with freshly ground black pepper. Bake in a 400°F oven until golden brown, about 18 minutes.

If you want to give them an added sheen, brush the pastry with an egg wash (1 egg mixed with 1 tablespoon water) before sliding into the oven. So gorgeous, but so easy to do!
