I didn't have a recipe like this in my files, so I turned to google and found these via Cooks.com:
CHICKEN OR TURKEY HOT DISH
2 or 3 c. cut up chicken or turkey
2 pkgs. frozen chopped broccoli
3 c. cooked rice
2 cans cream of chicken soup
4 tsp. lemon juice
1 c. mayonnaise
1/2 tsp. curry powder
1/2 c. chicken broth
Put cooked rice in bottom of 9"x13" pan or casserole. Add layer of chicken and layer of broccoli. Mix together soup, lemon juice, mayonnaise, curry powder and broth. Pour over first part. Top with 1 cup grated mild cheddar cheese and 1/2 cup bread crumbs. Slivered almonds may also be sprinkled on. Bake at 350 degrees for 45 minutes.
CHICKEN DIVAN
2 (10 oz.) pkg. broccoli spears
3 c. sliced cooked chicken
6 slices baked or boiled ham
2 cans cream of chicken soup
1/2 c. mayonnaise
1/2 c. heavy cream
1 tsp. lemon juice
1/2 tsp. curry powder
1/2 c. sharp Cheddar cheese, grated
1/2 c. soft bread crumbs
1 tbsp. melted butter
Cook broccoli, drain. Arrange in 11 1/2 x 7 1/2 inch greased baking pan. Place ham on broccoli, then chicken. Combine soup, mayonnaise, cream, lemon juice and curry powder and pour over chicken. Sprinkle cheese, bread crumbs and butter on top. Bake in 50 degree oven for 25 to 30 minutes.
Are either of these similar to what you had in mind? I think both sound delicious and will be filing them to try soon. If these aren't what you were looking for, were there any other ingredients used that might help someone here assist you in finding the right recipe?
I noticed there are a lot of casseroles that start out with chicken breasts, cream soup and mayonnaise. I had never heard of using mayonnaise in baking chicken before.
