    Rita, cornbread dressing really isn't part of our holiday tradition, but our American friends can't look at a turkey or ham on special occasions without knowing there's a big serving of cornbread dressing alongside. Thanks for posting your recipe - there's talk of an expatriate US Thanksgiving this year, and I know I'll be searching for reliable recipes that are just a little different from standard. • Janet

    Christopher...I'm getting back to you w\another 'Broccoli' recipe w\o rice. ~~Here's an easy one we use for luncheons:

    Broccoli and Cheese Casserole
    8 servings:
    5 eggs
    1/4 cup flour
    2 cups broccoli cuts, thawed and drained
    1 1/2 lbs. cottage cheese, drained
    14 oz. shredded cheddar cheese
    1 teaspoon salt

    50 servings:
    27 eggs
    1/2 cups flour
    12 cups broccoli cuts, thawed and drained
    10 lbs. cottage cheese, drained
    84 oz. shredded cheddar cheese
    2 tablespoons salt

    Beat eggs and flour together, using wire whisk, until smooth. Drain broccoli, and fold into eggs and flour. Drain cottage cheese; add to mixture. Add salt.

    Place mixture in 13 x 9-inch pan. (For 50 servings, divide ingredients among four greased 10 x 10 x 2-inch pans).

    Bake at 350 dF for about an hour (1 hour and 15 minutes for larger pans), or until a knife inserted in center comes out clean. (Internal temperature should be 180) Let stand 15 minutes.

    Can also add topping of bread crumbs and melted butter during last 15 minutes of cooking.

    Oh, I'm sorry. Here is the Broccoli Casserole that I use and we love it! :)

    2 lbs. frozen broccoli, thawed
    1 10 3/4 oz. can Cream of Mushroom Soup
    1 medium onion, diced
    1 lb. med. sharp Cheddar cheese, grated
    2 eggs
    salt and pepper, to taste
    1 pkg. Ritz crackers crushed

    Combine all ingredients except Ritz crackers in a large bowl. Mix well. Spoon into 13x9 inch pan. Cover with foil and bake at 350°F for 50 minutes.

    Remove foil and sprinkle crushed Ritz crackers on top of casserole.

    Bake, uncovered, for an additional 10 minutes or until crackers are golden brown. Let sit for 10 minutes before serving.

    We love cornbread dressing, and though we also love the sage, I never thought about using cream of chicken soup. Will hang on to that hint. Thanks.

    Frist of all Christopher, I want to welcome you to the table and hope you have fun shareing with us.

    Now, do you like egg noodles (I use No Yokes), if so.....try this.
    Make up your recipe of the Broccoli Cheese Casserole (omitting the rice only) and bake....cook the egg noodles when cassarole is about finished baking, drain and fold in at the end.

    It's different, but if you like noodles, I think you may just like this.

    Rita..thanks for sharing this...
    I always make my mom's stuffing.. with a base of saltine crackers... My best friend and her family come over..and they love Stove Top Stuffing... so I make that too.... but this corn bread stuffing looks yummy too.... Maybe I will have to make a third :) I see it now.. a stuffing contest.. LOL.

    We don't do cornbread dressing.....my Hubby doesn't like it at allllll.
    I use dried bread (toasted\broiled, cubed\crumbs) in my dressing.

    I made this up myself as I didn't want to boil a turkey or hen for broth. . I don't like dressing with sage nor do I like oyster dressing. Some people call it stuffing. Cook cornbread in iron skillet. When done break cornbread up in baking pan. Boil 6 eggs, peel and put on top of cornbread. Boil chopped onions, chopped celery, and chopped green onions until tender. Drain and put on top of eggs and cornbread. Use potato masher to mash and mix all ingredients. Add 2 cans of campbell's cream of chicken soup. You may need to add a little water. Mix well, salt and pepper. Bake 375-400 for 30 to 45 minutes or until golden brown. I like mine a little moist. Great. (Some people add a couple of raw eggs before baking mixing well before baking).
