I really like canned cranberry jelly but I love making things from scratch so I decided to make my own. I found a recipe and adapted it (the only jelly recipe I found online was using the fake juice and I didn't wanna do that). Here's my recipe...the orange is optional. It was really easy and I got 10 cups worth...it tastes great! Amount Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 cups prepared fruit (10 cups cranberries and 2 cups water) 1 Orange Orange Zest - finely zested 5 cups sugar 1 box SURE.JELL Fruit Pectin 1/2 teaspoon butter or margarine BOIL jars on rack in large pot filled with water 10 minutes. Place flat lids in saucepan with water. Bring to boil; remove from heat. Let jars and lids stand in hot water until ready to fill. Drain well before filling. PLACE cranberries and water in large saucepan. Bring to boil. Reduce heat to low; cover and simmer 10 minutes. Blend with a hand blender (make sure it's not a plastic one or it may melt)or blender. Strain out skins with a wire strainer like you'd use for pasta. Pour mixture into 6- or 8-quart saucepot and add zest. Measure sugar into medium bowl. Stir fruit pectin into fruit in saucepot. Add margarine. Bring mixture to full rolling boil on high heat, stirring constantly. Quickly stir in all sugar. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon. Ladle quickly into prepared jars, filling to within 1/8 inch of tops. Wipe jar edges and threads. Cover with two-piece lids. Close bands tightly. *Invert jars 5 minutes, then turn upright.
