    Foolproof Giblet Gravy

    3 cup water
    turkey giblets; reserve liver
    1 teaspoon italian seasoning; (or tyme or parsley)
    1 small onion; sliced (thinly)
    1 rib celery; sliced (half inch)
    1 stick carrot; sliced (half inch)
    salt and pepper; to taste
    --- gravy ---
    4 tablespoon margarine; or drippings
    3 tablespoon flour
    2 cup liquid; 1/2 broth 1/2 milk

    Put first 7 ingredients into saucepan; bring to boil; simmer 45 minutes. Strain reserving the broth. Finely dice giblets and reserved liver and again set aside. Opt: add chopped hard boiled egg. Cook strained broth 15 minutes more.

    Cook 3 tbsp flour in fry pan in margarine or drippings for 3 minutes or more. Slowy add reserved liquid and milk to equal 2 cups; stirring constantly. Simmer 10 minutes before adding giblets and liver, simmer till heated through.
