Scott, I didn't know that about chicken breasts. Your idea sounds definately worth a try. Thank you for always having such informative answers! I'm so glad your at our table! -- Jennifer "Every Saint Has A Past, Every Sinner Has A Future" -- Edited by 2864590 at 01/09/2009 11:52 AM PST

Jennifer, Chicken breasts are purged (water added)(that is all that juice in the breast package). Try frying them first, it will get rid of the excess water. Then add the sauce to them. If you want more flavor in the chicken, fry and sauce the day before and put them in the frig. Just reheat.

That sounds delish....I love those bone-in turkey breasts. They come out tender and juicy and it's not as much work as a whole turkey. -- Jennifer "Every Saint Has A Past, Every Sinner Has A Future"

He wanted Turkey...since we didn't have any for Christmas, (had brisket and ham), sooooo I baked a turkey breast today (as that's the only part he'll eat) and then cut it all off the bone to plate up. Made mashed potatoes, gravy and asparagus to go with.......yummm did it ever turn out good. He ate and ate. -- ~~~~> *>Cin(\0/)<* <~~~~ >> ><(((*>Jesus<*)))>< <<

I would fry the bite size pieces instead of broiling them to give them some brown flavor. I would serve them in a warmer or crock pot with the sauce covering them. If you can find small chicken legs, they may work instead of wings, for those that are wing challenge (I have a local market that has some small legs from time to time for 69 cents a pound). I have thought about slow cooking ribs with this, but haven't done it yet. Oh Dear.....he doesn't like legs either. Maybe 2 pounds of chicken breasts adds up to alot more meat and juices as you don't have to figure the bones into the weight? -- Jennifer "Every Saint Has A Past, Every Sinner Has A Future"

DJ, I honestly don't know . I made them the exact same way I did the first time , using the same weight of chicken-2lbs . The chicken was baked in the oven and it came out glazed on the wings/drumsticks but not on the breasts. I was thinking skin-on might crisp up and keep the juices in the chicken better? It seemed that all the juices ran out of the chicken breast strips and watered down the sauce. The skin and bones were the only difference between the two times I made it. -- Jennifer "Every Saint Has A Past, Every Sinner Has A Future"

If I may squeeze into this conversation? ~Jen, what did you do different with the chicken strips to make them watered down? Did you not double the sauce? Would that have helped?

Cin, I don't think the chicken strips will work as well. I say this from personal experience. As I have mentioned ,my hubby doesn't like wings either. So , anyway ,my neighbors made these really great wings/drumsticks this one time. They were so good that I asked them how to make them. I made them the first time using drumsticks instead of wings thinking hubby might eat them-he didn't. I did and they were glazed and yummy. My hubby said do the same recipe but with boneless skinless breast strips-I did(for Easter no less, it was just me and him) and I had a pile of sad, pale chicken floating in a pool of warered down sauce-not glazed or yummy. Never tried it again, but maybe that was just my fault or the recipe's fault. If you give this a go and get it to work I'd be interested for sure! -- Jennifer "Every Saint Has A Past, Every Sinner Has A Future" -- Edited by 2864590 at 01/06/2009 6:27 PM PST

Chef Scott...you've done it again! I definitely printed this out to try! Though I may take Cin's suggestion for chicken tenders. OR maybe just buy some small legs. I really don't know what all the hoopla is about chicken wings restaraunts & the like. I guess there just a "fun food" to serve in addition with other appys!

I find myself picking out the mini drumstick wing portions myself. LOL I'll eat the ones with two little bones, but I like the other section better. This combination of flavors sounds really good. -- Lisa

The canned oranges (mandarin, right?) sound like a great idea. When you try it, please let me know how they turn out. -- Jennifer "Every Saint Has A Past, Every Sinner Has A Future"
