Puffed Up with Presidential Pride...Recipes Included

Hello all! There was such much excitement regarding the Inauguration on Tuesday, I cannot decide which aspect of the day thrilled me the most. But I have to say my smile grew that much wider when I saw the Inaugural Luncheon menu. All of the courses--based on some of Abe Lincoln's favorite foods--sound heavenly, but (no surprise) the puff pastry appetizer piqued my curiosity most of all. Here is the complete menu: THE MENU Appetizer Seafood stew in puff pastry including scallops, shrimp and lobster Main course "Brace of American Birds (pheasant and duck)" served with sour-cherry chutney and molasses sweet potatoes Dessert Apple cinnamon sponge cake and sweet cream glacé Here is a link to the official recipes: http://media.idahostatesman.com/smedia/2009/01/20/15/doc-2009-recipes.source.prod_affiliate.36.pdf The recipe for the appetizer is fairly time consuming, but I have a solution to getting President-worthy results with a fraction of the time and effort (you've got to love puff pastry for that). First, the appetizer. Camilla - I tried the praline pumpkin mousse in the cornucopias for Thanksgiving. I could not believe how easy they were to make and the mousse was wonderful. I did not use the instant pudding but rather used regular pudding and used the microwave in 2 min increments x 4. Folded in the whipped cream and the consistency was perfect. They were a big hit. I saw the recipe in the newspaper and had to try it. Glad I did. Thanks.

To Kathy Gaal - an easy recipe that would only require 5 mins at the party is as follows - preheat to 400. 2" round cookie cutter cutouts in puff pastry, I use scalloped edges for appearance. Place 1" apart on parchment lined baking sheet. Then indent center of cutout puff pastry with 1" cutter but not all the way through. Refrigerate for 15 mins. until firm. Bake 10 to 15 mins until puffed and golden. Using sharp knife, remove centers. (Can be made ahead of time if kept in airtight container) Place 1 bay scallop in each pastry shell and cover with about 1/4 tspn saffron mayonnaise sauce". Bake 5 mins and serve at once. For sauce - 1/4 c mayo, 1/4 tsp saffron threads, 1/2 tspn lemon juice. Combine and refrigerate for about 30 mins allowing saffron to infuse and stir to blend color. Enjoy. They are wonderful. Sue

Hi! New here  Need Help!! Can puff pastry appetizers be refrigerated or frozed ahead of time and then taken to a party and just warmed up? Need appetizer for Christmas party!!! Can't make it at host's house - can just warm it up!!! Help!! Thank you. Kathy

Hi all! I am so excited about meeting all of you. I know you're likely baking up a storm--my kitchen is a flurry of flour--but do stop by when you get a chance and say “hi.” I am in a baking frenzy right now—one of my favorite predicaments! Included in the mix are two of my puff pastry favorites (I just couldn’t narrow it down to one), which are so easy, but so elegant and impressive, too: (1) Pinwheel cookies: I see from the forums that many of you love these cookies, too. They are so impressive, endlessly versatile, and just right for those “uh-oh, I need to make a few more batches of cookies for the (1) office party (2) school bake-sale (3) teacher present or caroling party. I make them with all sorts of jams, but also butter (brushed on) and spice sugars (e.g., cinnamon, pumpkin pie spice, nutmeg, or my favorite, cardamom), and/or finely chopped nuts. My little boy loves my “PB &J” pinwheels in particular: seedless blackberry jam and finely chopped peanuts. (2) Puff pastry cornucopias. I developed this recipe a few months ago—you’ll see it in my collection (Pumpkin Praline Cornucopias)--and I have been making it over and over ever since. Here's why: the cornucopias can be used for just about any filling—sweet or savory—I can imagine. For thanksgiving, I left off the sugar and stuffed them with cornbread-dried cherry dressing. I’ve also done chocolate mousse, flavored whipped cream with fruit, and almond green beans (the latter was one of my favorites; I loved the way the green beans looked poking out of the little “baskets”). Having done these so many times, I should add that you can make the cornucopias ahead of time (even the day before), then “re-crisp” them in the oven just before serving (place on an ungreased cookie sheet and place in oven at 250 degrees for about 10-15 minutes). So now, what are your favorites? It doesn’t have to be a puff pastry recipe. But do let me (and everyone else) know what your stirring up in your bowl. Cheers, Camilla
