Angela, Your dad is right. Also the time of death and butchering have a lot to do with it. The sooner you get it butchered the milder the taste. My dad killed a young buck near sunset, we waited till the next day to take it to the butcher, the game taste was more than we could handle (even with soaking). We ended up making summer sausage with it (50% pork 50% soaked deer, spices and beer)

Hello Carolyn (great name btw, it's my moms name! ) We eat a lot of deer and I HONESTLY think it's the way the meat is butchered is how it will taste. (or at least thats what my daddy has always said lol) -- ~*~Angela~*~

Hi Carolyn, Just wanted to welcome you to the Campbells boards.. I'm not much on deer meat.. we didn't have many people hunting deer in the Bronx where I grew up... LOL... Now I'm in Virginia..lot's of deer but it's not something I prepare.

I agree with Scott. I have not prepared deer meat , but I did have alot of elk meat at one time. The brining or soaking in salt water takes away the gamey taste and cleanses some of the blood off the meat-the elk was really bloody. I tried a bunch of different things with it, we grilled the elk steaks. What I liked the best was the meatloaf , using the ground elk meat. Carolyn We did this growing up on the farm, remove all the fat and bones, soak in salted water with a little vinegar covered in the frig for 24 hrs. , change the brine have way through, soak in milk for the next 24 hrs. , changing the milk have way through.

My Mom-in-Law used to cook deer meat a lot....she said always use fruits in it (or in with it) while cooking to take away the wild game taste.
