Make whipped potatoes like you want but add a box of cooked spinach dried. As kids we thought green potatoes were cool. I think finely diced sun dried tomatoes with some of the oil might make a cool red (maybe more pink than red) potatoes.

    Do you call them ''St Patty Mash''

    AND.. if adding the red and green both at Christmas you could call it your "ChristMash"

    As the parent of children who like the idea of "Green Eggs and Ham" (thank you Dr. Seuss) I think this might be the way to get them to eat spinach! We'll see. ;) Great idea!
