Make whipped potatoes like you want but add a box of cooked spinach dried. As kids we thought green potatoes were cool. I think finely diced sun dried tomatoes with some of the oil might make a cool red (maybe more pink than red) potatoes. As the parent of children who like the idea of "Green Eggs and Ham" (thank you Dr. Seuss) I think this might be the way to get them to eat spinach! We'll see.  Great idea! -- Lisa
