SHRIMP CASSEROLE 1 1/2 cups uncooked long-grain rice 1 1/2 pounds medium-size raw shrimp 1/2 cup butter 1 green bell pepper, chopped 1 onion, chopped 3 celery ribs, chopped 2 garlic cloves, minced 4 green onions, chopped 2 (10 3/4-oz.) cans cream of shrimp soup, undiluted* 1/4 teaspoon salt 1/4 teaspoon freshly ground pepper 1 cup (4 oz.) shredded Cheddar-Colby cheese blend 1/4 cup fine, dry breadcrumbs 1. Prepare rice according to package directions. 2. Peel shrimp, and devein, if desired. 3. Melt butter in a large skillet over medium heat; add bell pepper and next 4 ingredients, and sauté 10 to 12 minutes or until tender. Stir in soup, shrimp, salt, and pepper; cook 3 minutes or just until shrimp turn pink. (Do not overcook.) 4. Combine shrimp mixture and rice. Pour mixture into a lightly greased 13- x 9-inch baking dish. Sprinkle evenly with 1 cup shredded cheese and 1/4 cup breadcrumbs. 5. Bake at 350° for 25 minutes or until cheese is melted. *2 (10 3/4-oz.) cans cream of celery soup, undiluted, may be substituted. Makes 8 servings For Chicken-and-Rice Casserole: Substitute 3 cups chopped cooked chicken for shrimp and 2 (10 3/4-oz.) cans cream of chicken soup, undiluted, for cream of shrimp soup. Proceed with recipe as directed. Top with chow mein noodles and bake 10 minutes longer. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ FESTIVE SEAFOOD CASSEROLE 8 oz. pkg. noodles 1 tbsp. butter 1/4 c. each of chopped onion, pepper, mushrooms 1 fresh tomato, sliced or canned sliced tomatoes 2 c. seafood, lobster knuckle meat or shrimp, crabmeat, scallops or canned tuna 1 tbsp. lemon juice 1/2 c. mayonnaise 1 sm. can cream of mushroom soup or 1 cup white sauce or Cream of Shrimp soup 1/2 c. sharp cheddar cheese, shredded Salt & pepper Cook noodles and drain. Melt butter in skillet and sauté lightly onion, peppers and mushrooms. In a large bowl combine seafood, sautéed vegetables, tomato, mayonnaise, lemon juice, salt and pepper. Add noodles and soup. Hi Wendy, welcome to the Table! I found this on another site. Is this the recipe you use? Campbell's Beef Taco Bake Recipe 1 pound ground beef 1 can (10 3/4 ounces) Campbell's Condensed Tomato Soup 1 cup Pace Thick & Chunky Salsa 1/2 cup milk 6 flour tortillas (8") or 8 corn tortillas (6"), cut into 1" pieces 1 cup shredded Cheddar cheese (4 ounces) In medium skillet over medium-high heat, cook beef until browned, stirring to separate meat. Pour off fat. Add soup, salsa, milk, tortillas and half the cheese. Spoon into 2-quart shallow baking dish. Cover. Bake at 400°F for 30 minutes or until hot. Sprinkle with remaining cheese. Serves 4. It sounds fantastic, and I think sour cream, olives, maybe jalapenos if you like it spicy, corn bread, corn chips, maybe some guacamole would all go great with this recipe. -- Lisa

Can someone tell me did they change the name of the recipe that called for tortillas cut up, tomato soup, salsa and hamburger that we used to call "Tortilla Soup" to some sort of tortilla bake? I was hoping that I could find some add on's to the Tortilla Soup recipe that my family loves...Maybe some other items to put it with, etc. Thanks for your help! Wen
