    You can't taste the cottage cheese. It just makes them rich and creamy. They have reheated well in the oven. The microwave was ok but the were not as good as the oven. The nectarines got a little dark, so next time I am going to add a little lemon juice to the chopped up fruit.

    Some things I'm going to try.

    Blueberry's or some mixed berry's instead of nectarines, no cinnamon.
    Add some orange zest to the batter.
    Use peaches instead.
    Peal, core and chop apples, precook in a little butter.
    Peal, core and slice, precook in a little butter and make a pattern on pancake.

    Really Angela? That is so funny to me because Tyler will eat a whole 16 ounce container of cottage cheese at once if I let him! Lol! He eats it plain, but sometimes he makes one of his own "recipes". He likes to get tostada shells (the crunchy ones) and put the cottage cheese on there with either Pace mild salsa or Archer Farms(Target brand) peach-pineapple salsa. Then he sprinkles it with shredded cheddar cheese. He loves that for lunch, especially if it's hot outside.

    Nectarine Pancakes (low fat)

    I made these for breakfast Friday. They were light and flavorful. A friend gave me a jug of peach syrup that went well with it (she is from Atlanta). I doubled this and froze the extra, for those days I don't have time in the morning.

    1/2 cup fat-free cottage cheese
    1/4 cup fat-free egg substitute
    3 tbs sugar
    1/2 cup all-purpose flour
    1/2 tsp baking soda
    1/2 tsp baking powder
    1/2 tsp ground cinnamon (I used 1/4 tsp)
    4 egg whites
    2 nectarines, chopped

    Place the cottage cheese in a sieve. Set over a bowl and allow to drain for 10 minutes. Transfer to a blender or food processor. Blend, scraping the sides of the container occasionally, for 3 to 5 minutes, or until completely smooth. Add the egg substitute and sugar. Process briefly to mix. Set aside.

    In a small bowl, combine the flour, baking soda, baking powder, and cinnamon. Mix well.

    Place the egg whites in a large bowl. Beat with an electric mixer until stiff peaks form. Sift the flour mixture over the egg whites. Fold to combine. Add the cottage-cheese mixture. Fold to combine.

    Coat a large no-stick skillet with no-stick spray. Warm over low heat. Spoon the batter in 1/4-cup measures into the pan. Sprinkle 2 tablespoons of the nectarines over each pancake, pressing in lightly. Cook for 5 minutes, or until the bottoms are golden. Flip and cook for 4 minutes, or until golden. Remove to a platter. Cover to keep warm while cooking the remaining pancakes.
